Celeriac Pasta Noodles

Celeriac Root Pasta Noodles are wonderful veggie noodles that are paleo, low carb, gluten free, and vegan.

Ingredients

  • 1 Celeriac root , peeled and cut in fourths
  • 5- 7 cups water , enough to cover noodles
  • 1/8 tsp sea salt

Kitchen Tools:

  • Vegetable peeler (potato peeler)
  • Vegetable Spiralizer
  • Medium to large sauce pan

Instructions

  • Using a vegetable peeler, peel the dirty outer skin and hairy stuff off the celeriac root until it is white in color.
  • Cut into fourths. Put each large piece into the spiralizer and turn into noodles.
  • Once spiralized, bring a pot of water and pinch of salt to a boil.
  • Add celeriac noodles and boil for 2 to 3 minutes until just soft. Remove from heat and drain water from noodles.
  • Can pat noodles dry a little with a paper towel if desired.
  • Serve with a sauce of choice.
