In a small bowl dissolve the instant coffee in the hot water and stir until dissolved. Set aside.
In a food processor or blender combine: 1 ½ tablespoon coconut oil, 1 ½ tablespoon omega powder creamer, the instant coffee water mixture, 2 tablespoon erythritol sweetener, ½ teaspoon cacao powder, 3 tablespoon almond flour, ⅛ teaspoon mint extract. Blend or process until smooth paste forms.
Put the mixture in the freezer for 8 to 10 minutes to firm.
In a small bowl combine: 1 teaspoon cacao or cocoa powder and 1 ½ teaspoon erythritol sweetener. Set aside.
Remove fat bomb mixture from freezer and using your hands or a small cookie scoop form and roll the mixture into 6 small balls.
Rolls each ball into the cacao and sweetener powder coating and serve.
Store in a covered container in the fridge for up to 5 days.
