Preheat oven at 350℉ (177℃), and line or grease a baking sheet.
Use a large skillet over medium heat and add the ground beef. Break up the meat with a wooden spoon while cooking. Cook the ground beef thoroughly, until browned and no longer pink.
Drain any excess grease from the skillet. Then return to the stove and reduce the heat to low.
Add the 2 tablespoon tomato sauce, 2 tablespoon water, and 2 teaspoon taco seasoning. Stir together until the meat is coated in the sauce.
Cover and allow to simmer for 5 minutes.
Arrange pork rinds on the prepared baking sheet and top with taco meat, olives, and shredded cheese and Bake for 5 to 8 minutes, or until the cheese has melted.
Remove from the oven and top with avocado, sour cream, jalapenos and hot sauce if desired. Plate and serve.
