In a hot cast iron skillet over medium heat, saute coriander seeds, peppercorns, anise seeds, and mustard seeds for 2 - 3 minutes, or until fragrant.
Add the bay leaves, salt, and red pepper flakes to the skillet and saute for 25 seconds more.
Add spices to a food processor or spice mill and pulse a couple of times just to release the flavors.
Store the spice mix in an airtight jar or container in a cool dry area. Use the spice mix to replace the spice packet that comes with corned beef or to season corned beef that does not have a spice packet.
