Preheat your air fryer to 375°F (190°C) while you prepare the pumpkin. Wash, dry, peel, and remove and scrape out the seeds of the pumpkins (you can save the seeds for roasting later on if desired).
Slice it into ½ inch fries. Try to cut uniform thickness to ensure an even cooking.
In a large mixing bowl, combine the olive oil, paprika, garlic powder, dried oregano, salt, and pepper. Toss the pumpkin fries in this mixture until they are well coated.
Place the seasoned pumpkin fries in the air fryer basket in a single layer, ensuring they are not too crowded. If necessary, cook in batches to avoid overcrowding.
Cook for about 12-15 minutes or until they are tender on the inside and crispy on the outside. Shake or flip them once or twice halfway through cooking to ensure even crispiness.
Remove them from the air fryer and let them cool slightly.
Garnish them with optional salt, fresh parsley, or grated parmesan cheese if desired, and serve.
Oven Directions
Follow directions 1- 3, except preheat the oven to 425℉ (220℃).
Layer pumpkin fries onto a parchment paper-lined baking sheet.
Bake in the preheated oven for 10-15 minutes, flipping once halfway through, until the fries are crisp and golden brown.
Remove from oven and garnish them with optional salt, fresh parsley, or grated parmesan cheese if desired, and serve.
