1medium-sized7-8 inch delicata squash
2 ½tablespoonsolive oil or melted butter
4tablespoonsGrated Parmesan Cheese
1teaspoonGarlic Powder
¼teaspoonSalt
¼teaspoonBlack Pepper

½tablespoonFresh Thyme leaves
1 ½tablespoonsCooked Bacon crumbled *optional

Instructions
Heat the oven to 425°F (220℃) and line a baking tray with parchment paper or a silicone mat. Set aside.
In a medium-sized bowl combine the grated parmesan, garlic powder, salt, and black pepper. Stir together and set aside.
Wash and dry the delicata squash and cut off the ends.
Cut the delicata squash in half, lengthwise. Scoop out and discard the seeds. Cut each squash half width-wise into ½-inch-thick slices or crescents.
Brush each squash slice with olive oil or melted butter on each side. Arrange squash slices on the baking tray.
Sprinkle squash with ½ of the parmesan garlic mixture.
Bake the delicata squash for 15 to 20 minutes, or until starting to brown and become tender.
Remove from oven and use a spatula turner to flip over squash slices.
Sprinkle with the remaining half of the parmesan garlic mixture. Return to oven and bake for 8 to 10 minutes longer or until the other side starts browning and is tender.
Garnish with fresh thyme leaves, sprinkle with optional cooked crumbled bacon, and shaved Parmesan. Serve.
