Preheat oven to 350 F, and line 2 baking sheets with parchment paper or silicon baking mats. In a large mixing bowl with electric hand beater or a stand mixer, cream butter and sweetener until well combined.
Add nut butter, egg, and vanilla extract to the mixing bowl and beat, using a rubber scraper to scrape the sides until combined.
In a separate combine: coconut flour, and cocoa powder. Stir together.
Add flour mixture to the nut butter mixture and beat until combined.
Add chocolate chips and hand stir into the dough.
Place tablespoon size spoonfuls across cookie sheet 1 ½ inches apart.
Bake for 12 to 15 minutes, or until cookies are browned on the bottoms.
Remove and cool for at least 20 minutes or longer, or until cookies firm up and set.
