Place a sheet of parchment paper or a silicon baking mat onto a large baking sheet or two medium-sized baking sheets. Set aside.
Slowly melt ½ cup of chocolate chips and 1 teaspoon of butter over a double boiler or on half power in the microwave in a glass bowl and stir every 30 sec to prevent burning.

Use a spoon to make small circles of melted chocolate about 1 inch apart on the prepared baking trays, and place 4 pecans together into the 24 melted chocolate circles for the base of the turtles.
1 cup of Pecan Halves or whole Almonds
Place baking trays into the fridge or freezer for 10 minutes to solidify the chocolate nut base.
Make the keto caramel sauce – In a saucepan over medium-low heat, melt the ⅓ cup butter and brown slightly. Once lightly browned, stir in the ¾ cup low-carb brown sweetener and the salt, and whisk well. Once the sweetener is dissolved, pour in the ¼ cup heavy cream and the optional xanthan gum. Whisk until it is smooth and let it cook on medium-low heat for 6-8 minutes Do Not Stir or Whisk or Stir while cooking!
¾ cup Low Carb Brown Sweetener, ⅓ cup Butter, ¼ cup Heavy Cream, ⅛ teaspoon Salt, ¼ teaspoon xanthan gum *optional
After 6 to 8 minutes, remove it from the heat and lightly whisk or stir. Let the caramel sauce rest for about 10 minutes to thicken before adding it to the pecans.
Remove trays from the fridge or freezer. Using a spoon pour about 2 teaspoon of caramel over each chocolate pecan base. Put the trays back in the freezer for 12 minutes to have the caramel set.
While the caramel is setting, slowly melt 1 cup of chocolate chips and 2 teaspoons of butter over a double boiler or on half power in the microwave in a glass bowl. Stir every 30sec to prevent burning.
1 ½ cups Sugar Free Chocolate Chips, 1 tablespoon Butter
Remove the trays from the freezer and pour 3 teaspoons of the melted chocolate over the top of each of the caramel turtles and use a spoon to slightly swirl and spread the chocolate. Sprinkle each with a tiny amount of optional sea salt. Allow it to rest at room temperature to set, or return it to the fridge for 10 minutes.
Serve or store in a covered plastic container with parchment paper between layers of turtles in the fridge for up to 10 days.
