Add peanut butter and vanilla extract and beat until smooth. Use a rubber scraper to scrape down the sides and mix again until combined.
2 tablespoon Smooth Peanut Butter, ½ teaspoon Vanilla Extract
While the mixer is on, slowly add the heavy cream and continue to mix until smooth, fluffy, and creamy.
4 tablespoon Heavy Cream
Spoon or pipe with a piping bag the mousse into 3 small jars, cups, or bowls (I used 4-ounce mason jars).
Drizzle each mousse with sugar-free caramel syrup and sugar-free chocolate syrup.
1 ½ tablespoons Sugar-Free Caramel Syrup, 1 ½ tablespoons Sugar-Free Chocolate Syrup
Sprinkle with peanuts and top with an optional dollop of whipped heavy cream. Serve and enjoy. Cover and refrigerate any extra portions for up to 3 days.
