Choose which flavor chip you want to make and gather the ingredients. Add 1 cup of full-fat cottage cheese in a medium-sized bowl and ½ cup of shredded cheddar cheese. Stir until combined.
Add sour cream if making the sour cream and onion flavor (omit sour cream if making the plain or chili lime flavor). Add the listed spices for the flavor of the chip you’re making. Mix thoroughly.
Spoon teaspoons of the mixture about 3 inches apart onto a square piece of parchment paper that will fit in your microwave & you will need to cook these in separate batches as I could only fit about 9 chips but 6 or less would work better at a time in my microwave.
Flatten each cottage cheese mixture mound very lightly with the back of the spoon (don't flatten it too thin).
Carefully place parchment paper with the flat cottage cheese mounds into the microwave.
Microwave at half power (50% power) for 3 minutes. When done, the chips should look dry and lightly browned. If they look wet or runny, continue to heat in 30-second increments at full power until slightly browned and have a dry texture. It took almost 4 minutes in my microwave, but it could take 5 minutes or more in some microwaves. Sometimes the chip may still run together, and that is okay as you can easily break them apart once they are done and hardened.
When chips are done, remove parchment paper from the microwave and let rest for 2 minutes to harden. Repeat the process for the remaining batches.
Carefully peel the cottage cheese chips from parchment paper and serve.
