Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
Combine the peanut butter, sugar-free white chocolate chips, and 1 teaspoon of coconut oil in a medium-sized, microwave-safe bowl.
Microwave for 30 seconds, stir, and then microwave for 20-second increments, stirring in between until mostly melted and smooth.
Once melted, add the peanuts and stir until all the peanuts are coated.
Spoon six small mounds of the cluster mixture onto the lined baking sheet.
In a small microwave-safe bowl, add the dark chocolate chips and the ½ teaspoon of remaining coconut oil. Microwave in 15-second increments stirring in between until melted and smooth.
Drizzle the melted chocolate over the peanut clusters.
Freeze for 35-45 minutes until solid. Serve and enjoy!
