Grease and preheat a mini or small waffle iron on medium-high to high setting.
In a small bowl, vigorously whisk the eggs and peanut butter together for 2-3 minutes until thoroughly combined.
Add half of the batter to the hot waffle iron and close the lid. Cook for 2-4 minutes (check for doneness after 2-3 minutes) or until golden brown and crisp.
Remove the waffle from the iron and repeat the process.
Serve with butter and low-carb maple syrup, or berries and whipped cream.
