These easy-to-make keto waffles balance soft, chewy, and crispy textures without being dry or eggy.
Keto waffles are delicious with a pat of butter and topped with a pour of sweet low-carb maple syrup.
This simple batter can also be used to make pancakes.

- 2 ½ tablespoons Creamy Peanut Butter or Creamy Almond Butter (unsweetened), softened at room temperature if cold.

Grease and preheat a mini or small waffle iron on medium-high to high setting.
In a small bowl, vigorously whisk the eggs and peanut butter together.
Whisk for 2-3 minutes until thoroughly combined.
Add half of the batter to the hot waffle iron.
Close the lid. Cook for 2-4 minutes.
Check for doneness after 2-3 minutes to see if golden brown and crisp.
Remove the waffle from the iron and repeat the process.
Serve with butter and low-carb maple syrup or berries and whipped cream.
Hint: Use creamy peanut butter or almond butter at room temperature. If the nut butter is cold and from the fridge, let it come to room temperature, or heat the nut butter by itself in the microwave for a few seconds and let it cool before adding the eggs.

- Peanut Butter—Experiment with various nut and seed butter to create unique flavors in our keto waffles. Almond butter, macadamia butter, or even seed butter like sunflower seed butter can be used instead of peanut butter. Just ensure the nut or seed butter is soft and spreadable for the best texture. Almond butter provides a more neutral taste if you're not a peanut butter fan.
