    Keto Instant Pot Baby Back Ribs

    These Keto Instant Pot Baby Back Ribs are tender, fall off the bone, saucy and lip-smacking good, low carb, bone-in, pork ribs that you can easily make with your Instant Pot.

    I used a rack of pork ribs because they fit nicely into the Instant pot without cutting them apart. Beef ribs were definitely too big to fit in my 6 quart Instant Pot.

    I've already made super yummy, keto, boneless, country-style ribs in the Instant Pot and keto baby back ribs in the slow cooker, so I wanted to make some baby back ribs in the Instant Pot.

    Keto Instant Pot Baby Back Ribs Recipe

    Ingredients

    • 2 to 3 lbs baby back pork ribs (bone-in)
    • 1 cup of water
    • ⅓ cup beef  broth
    • ½ tsp liquid hickory smoke

    Rub Ingredients

    • 1 tablespoon paprika
    • 1 tablespoon chili powder
    • ½ tablespoon garlic powder
    • ½ tablespoon onion powder
    • 1 teaspoon cumin
    • ¼ teaspoon cayenne 
    • 2  teaspoon sea salt
    • 1 teaspoon ground black pepper
    • 2 tablespoon Low Carb Swerve Brown Sweetener
    • ⅔ cup My Homemade Low Carb BBQ Sauce Recipe, or  you can also use a store-bought Low Carb BBQ Sauce, divided

    Directions

    1. Remove the membrane from the rack of ribs with a knife if they still have one (usually, the membrane is already removed from most store-bought ribs).
    2. In a small bowl, mix all the rub ingredients. Massage the rub into the rack of ribs covering all the surfaces on both sides of the rack. Set aside.
    3. Place the trivet (the rack with handles that comes with the IP) into the Instant Pot inner pot.
    4. Pour water, beef broth, and the ½ teaspoon liquid smoke into the pot.
    5. Bend rack of ribs in a circle with the meaty side of ribs facing out (the meaty side facing the walls of the pot), place onto the trivet in the pot * see photo.
    6. Using ¼ cup of bbq sauce (reserve the larger portion of sauce for later), gently brush or spoon over the ribs in the pot.
    7. Close and lock Instant Pot lid, and flip the steam release handle to the Sealing mode.
    8. Press Pressure Cook (or Manual on some models) on High Pressure and Press the + button to set the timer to 25 minutes.
    9. Once cooking time is complete, let the pressure Naturally Release for at least 20 minutes (do nothing & let the pot sit for 20 minutes) and then Quick Release any remaining pressure.
    10. Heat oven to broil (high). Gently lift ribs from Instant Pot and place on a foil-lined, silicone baking mat lined or non stick baking sheet. 
    11. Brush ribs with remaining BBQ sauce covering all sides. Broil for 4 to 5 minutes or until the sauce has caramelized. Remove from broiler and serve.

      Oh so good. Added 5 minutes to pressure cook and then turned on keep warm. Skipped the whole broil and ate served from Instant Pot. What leftovers? Next time will make more.

      These were easy and amazing. Don't tell your family they are keto and they would never know. So much flavor, moist inside, and has the great glazing on the outside people love with ribs. Thank you! This is going to be a go to.
