    Low Carb Thin Crust Pizza-

    My Low Carb Thin Crust Pizza is a yummy, gluten-free, low carb, keto pizza that has a thin, slightly crisp, but sturdy crust.

    This Low Carb Thin Crust Pizza has been a couple of years in the making. I'm so excited because I finally made a low carb pizza dough crust that has a similar texture and taste to the real thing!

    After many failed pizza dough experiments, finally, I made a veggie-free crust that is low carb and much like the kind at a pizzeria.

    It can be made into a thin crust that is crisp but will hold toppings.

    I sort of combined the best of almond flour crusts, fathead crusts, cheese crusts, and psyllium husk crusts into one amazing pizza dough crust that has made me extremely happy!

    Now I can have a low carb pizza that tastes like a real pizza! Even my kids thought it was good.

    Low Carb Thin Crust Pizza

    Pizza Crust Ingredients:

    • ⅔ cup almond flour
    • 2 tbsp psyllium husk powder, like this one
    • 1 egg, beaten
    • 2 Tbsp egg whites (from carton), or 1 separated egg white
    • 2 tablespoon cream cheese, softened
    • ½ cup grated mozzarella cheese
    • ¼ tsp garlic salt
    • ¼ tsp Italian seasoning

    Pizza Sauce Ingredients:

    • ½ cup tomato sauce * make sure it is low carb and without sugar
    • ½ teaspoon garlic powder
    • ½ teaspoon Italian seasoning
    • ¼ teaspoon oregano

    Toppings:

    • ⅔ cup grated mozzarella cheese
    • 18 slices pepperoni * I used uncured nitrate free pepperoni
    • ¼ cup slices olives *optional

    Tools:*Large Bake sheet or Round Pizza Pan,  Pastry Brush, Rolling Pin

    Directions:

    1. Preheat oven to 425 F ( 218 C). In a large mixing bowl combine:  ⅔ cup almond flour, 2 tablespoon psyllium husk powder, ¼ teaspoon garlic salt, and ¼ teaspoon Italian seasoning. Mix together and set aside.
    2. In a medium mixing bowl combine: 1 egg, 2 tablespoon cream cheese softened, 2 tablespoon egg whites (or 1 separated egg white), and ½ cup grated mozzarella cheese.  Mix together thoroughly.
    3. Add wet ingredients to dry ingredients and mix together well.
    4. Place the dough between two large sheets of parchment paper. Using a rolling pin, roll into a thin round crust.
    5. Place crust between 2 sheets parchment paper on a large baking sheet or pizza pan. Peel off top sheet of parchment paper.  Bake for 10 minutes. Remove from oven.
    6. Flip over crust on to pan and peel off the other sheet of parchment paper.
    7. Return to oven and bake for 10 more minutes. In a bowl combine all the pizza sauce ingredients and mix.
    8. Remove pizza from oven and spread sauce over crust. Top with cheese, pepperoni, and optional olives. Bake once more for 5 minutes or until cheese is melted. Serve.

      I'm pretty sure you nailed it on this crust! Y-U-M! My husband says it is the best crust ever! I have tried a lot of low carb crust recipes and I agree with him, this is really good! My brother ate the last two slices and he said he couldn't tell it wasn't a legit real pizza crust! (He's picky about his pizza!) Thanks for sharing!

      I think I'm being kind in giving this three stars. First of all, the ingredients list for the crust includes garlic salt and Italian seasoning, but the instructions never tell you to add these things, so I didn't. In fairness, I doubt omitting such small quantities (1/2 tsp each) made a huge difference. And unfortunately I'm not as impressed with the texture as some reviewers seem to be, and we found it to be nothing like regular pizza crust. It is certainly better than most of the low-carb crusts I've made, so that's a big point in its favor, but it still lacks any semblance of the crispiness we seek (and the "chew" you only get from wheat gluten), aside from the slight crunch around the edges that resulted from me letting it go a couple minutes too long.
      I have mixed feelings about this recipe overall: it will never be mistaken for a good, carb-laden thin crust, but it is still the best attempt at replicating such a crust that I've experienced. Thanks for sharing, but I think next time I'll move on in my quest to find a satisfying low-carb pizza crust recipe.

        You will never find an absolute replica for wheat gluten products. You are expecting too much. There are very many low carb recipes for pizza bases and this is one of the best I've come across after trying the very many. I wish you luck searching for the elusive holy grail. You'll need it! My own search happily ends here. Best wishes.

      Very good crust! I think I made mine too thin for the time/temp since I like razor thin crust and used a guided rolling pin to hammer it out to 1/16th, so it kinda burned... like, devil-burned, but only around the edges. I'd suggest for someone who's planning on making it that thin, take it out, put your cheese and toppings on at the 10 minute mark, then go another 10 minutes, omitting the additional 5 minutes at the end. The crust looked and felt perfect after 10 minutes. Boy was it crisp following the directions though, no sag at all!

      I asked my son to try it and he ate more than half. =(

      You posted NI as net 4 carbs and I am not sure how this figure was arrived at. Carbs minus fiber I think should be 5 g and not 4? Would appreciate how to correctly get carb count as I am a Keto WOE person. Love all your recipes that I have been reading since finding your site a few days ago and appreciate all you have done. I have always been one to read a recipe and figure out quickly if it's "for me" LOL. I think we have similar taste buds! 🙂

      Most excellent! Instead of cream cheese (we don’t to cows milk) I used 2 tablespoons coconut full fat milk) I also substituted goat milk mozorella. We then cooked it in our pellet stove which gave it a wood fired flavor. It was fantastic! Softer than the crunchy thin crusts but I’m not sure if that was the coconut milk substitution or the pan I used. Still, the flavor was amazing! My pizza-loving husband was so happy!! I will definitely be using this recipe again!!

        Hi Teri, Psyllium husk powder is a soluble fiber from psyllium seed husks and it adds fiber and binds the dough together better: http://amzn.to/2uOj0Ig. You can substitute it with golden flax meal if you prefer.

      Would there be an alternative to almond flour? Family members are allergic to almonds but I'd love a good low carb pizza crust!!!

        Shae, you can replace the almond flour with 1/3 cup coconut flour.
