Easy One Pot Beef Roast Wine Sauce Low Carb Paleo is a very delicious and simple way to make a beef roast with a lovely, flavorful wine sauce gravy.
An Easy One Pot Beef Roast that is super low carb, paleo and gluten-free. A beef pot roast with a spice rub and a glorious tasting wine sauce gravy, that is made all in one stockpot.
This is my favorite way to cook a beef roast, and with my 50th birthday happening this week, I decided to share it with you.
We can celebrate my oldness together with this special but simple meal.

Even before pouring the wine sauce gravy, this roast was calling to me!
Easy One Pot Beef Roast Wine Sauce Low Carb Paleo:
Ingredients:
- 2 lb beef roast (I used a tri tip roast)
- ½ teaspoon sea salt
- ½ teaspoon black pepper
- 1 teaspoon paprika (I used smoked paprika)
- ½ teaspoon garlic powder
- 1 tsp thyme
- ½ tsp onion powder
- 1 tbsp avocado oil or olive oil
- 1 ½ cup beef broth
- ½ cup white wine, or cooking wine
- 3 cloves garlic, minced
- 1 ½ tsp arrowroot powder
- 1 ½ teaspoon cold water
Directions:
- In a small bowl combine: sea salt, black pepper, paprika, garlic powder, thyme, and onion powder. Mix together.
- Rub seasoning mixture all over roast.
- Heat a large stockpot over high and add 1 tablespoon oil. Sear the roast on both sides until browned crust forms.
- Pour beef broth and wine over the roast. Sprinkle minced garlic over the top. Bring to a boil, cover, and lower heat to medium-low or low heat.
- Cook for 40 to 50 minutes (or internal temp reaches 145 F to 150 F), turning roast over halfway through cooking time (turn after 20 minutes).
- Remove roast from pot and let rest at least for 8 to 10 minutes before cutting.
- In a small bowl combine: arrowroot powder and cold water. Stir until mixed.
- Bring the sauce in the stockpot to a boil and pour it in the arrowroot powder mixture. Boil and stir until sauce slightly thickens. Turn down the heat.
- Slice roast and pour or ladle sauce over sliced roast.

So want to try this.. want a nice tender roast ,not ..dry !! Do you know what less simmer time to be cooked less ?, more medium rare ?

Yes, it can be done medium rare and the time would depend on the size of the roast and thickness. You would need to check it periodically during cooking with a meat thermometer and remove when internal temperature reads 150F and then remove and let rest for 10 mins before cutting. My kids like it done medium to medium well.

I am having a hard time finding Arrowroot Powder. I won't order online either. If it is a thickener, can I use same amount of Cornstarch?

Kathleen, I found arrowroot powder in the spice section of the grocery store, not in the baking section. You can use cornstarch, but the amount would be more. probably about 2 tbsp + 2 tbsp water, or more if needed.

Thank you Cheryl 🙂 Yes, you can shorten the simmer time for medium rare or a rare roast. I cooked it to medium, as my kids won't eat medium rare.
