    Easy Baked Jerk Chicken Low Carb-

    An easy baked jerk chicken low carb recipe that is grain free and paleo.

    Easy Baked Jerk Chicken Low Carb is gluten-free, grain-free, keto, low carb, and paleo. Easy to make, and just as delicious as grilled jerk chicken from a Jamaican restaurant.

    Made with a Jamaican jerk marinade that has healthy ingredients, and spices that give this chicken a wonderful flavor with a little spice.

    You can adjust the cayenne pepper to your taste (mild to medium spice level).

    These are baked in the oven, but you can also throw these on the indoor or outdoor grill as well.

    Easy Baked Jerk Chicken Low Carb & PaleoPin

    Easy Baked Jerk Chicken Low Carb:

    Marinade Ingredients:

    • ⅓ cup avocado oil, or olive oil
    • ½ tablespoon apple cider vinegar
    • 1 teaspoon sea salt
    • 1 teaspoon ground allspice
    • 1 ½ tsp Truvia brown sugar for low carb, or 2 tsp coconut sugar for paleo
    • 1 teaspoon onion powder
    • ½  tsp dried minced garlic
    • ½  tsp ground nutmeg
    • ½  tsp black pepper
    • ½  tsp ground ginger
    • ¼  tsp to ½  tsp cayenne pepper (mild or spicier)
    • ¼ teaspoon ground cinnamon
    • ¼  tsp  dried thyme leaves
    • 2 tablespoon chopped scallions * optional

    Chicken:

    • 2 ½  lbs (or 10 pieces) chicken thighs, drumsticks, wings, or breasts (with bone in and skin on)

    Directions:

    1. In a large mixing bowl combine all marinade ingredients. Mix together thoroughly.
    2. Add chicken pieces and toss to coat with marinade.
    3. Cover mixing bowl with chicken and marinade in it, with plastic wrap or foil and place in the fridge to marinate for 2 hrs or longer.
    4. Preheat oven to 375 F. Place marinated chicken skin side up in a 9 x 13 baking pan.
    5. Bake for 1 hour and 10 minutes or until chicken is done near the bone. Turn oven to broil setting, and broil chicken to brown the skin for 2  to 4 minutes. Remove from oven and serve.

        Hi Donna, I don't know if the chicken skin will brown and get crisp in the slow cooker. Maybe after slow cooking, put it under the broiler for a couple minutes to brown. I know that is an extra step and might defeat the purpose of slow cooking. It would definitely need more of the marinade, possibly double the marinade liquid ingredients. Still not sure if it would work out, though. Good future experiment idea 🙂

      Hello Stacey! I posted a review of your Buffalo Wings last week. Now, I also made this, I added ground cloves., and my boys again loved this, in fact, they were gone in 60 seconds or so...lol... good thing I set aside some for myself to bring to work.       This marinade was awesome! I used it on skinless chicken thighs and bbq'd then instead of baking them. Marinated them about 8 hours. Fantastic!!!
