These Easy Berry Lemon Cream Parfaits Low Carb are gluten-free, keto, paleo with a vegan dairy-free option.
A truly simple, no-bake, yet amazingly yummy dessert recipe. Use any kind of berry jam in the fruit compote part of the recipe, such as; raspberry, blackberry, or mixed berry.
You can use store-bought jam, sugar-free jam, homemade jam, or chia seed jam in the recipe.
This treat can be made pretty quickly, and be ready to serve immediately, as there is no waiting to bake, freeze, or set.
A Godsend when you want a creamy, light, and refreshing dessert in your mouth right now! Not that we are impatient or anything of the sort, lol.
Blueberries are full of antioxidants, can prevent Alzheimer's Disease, and are known for their brain-boosting powers! So these tasty parfaits are technically brain food.

Easy Berry Lemon Cream Parfaits Low Carb-
Ingredients:
Granola Nut Topping:
- 10 almonds, dry roasted or toasted
- 1 tbsp unsweetened shredded coconut
- 1 teaspoon sweetener of choice: Swerve for low carb, or coconut sugar for paleo
- ¼ tsp cinnamon
Fruit Compote:
- ⅔ cup blueberries, fresh or frozen and defrosted
- 1 tablespoon lemon juice
- 1 tbsp berry jam, fruit sweetened, homemade chia kind or sugar free for low carb
- ½ tablespoon sweetener of choice: Swerve for low carb, or coconut sugar for paleo
- 1 teaspoon vanilla extract
Cream:
- 4 tablespoon whipped cream or whipped coconut cream ( for paleo or vegan), how to make whipped coconut cream
- A few drops liquid sweetener to taste: stevia for low carb or vegan, or honey for paleo * optional
Kitchen Tools: Dessert Shot Glasses, Blender- Nut Grinder
Directions:
- In a small food processor or magic bullet blender, or coffee grinder, add all the granola nut topping ingredients, and pulse until a coarse large grain texture forms. Pour into a bowl and set aside.
- In a medium mixing bowl combine all the fruit compote ingredients, and stir until berries are coated and the jam turns into a syrup texture.
- Add a little fruit compote to the bottoms of 2 dessert shot glasses, then add a layer of some whipped cream, and add another layer of fruit compote, add a little more whipped cream, and sprinkle the top with the nutty granola topping. Serve and enjoy!

Where was the lemon in the recipe....just in with the blueberries...thought it meant lemon cream.

The lemon is in with the berries, so it is actually "berry lemon & cream parfait", but WordPress (the blogging platform I use) does not like the word "and" or any conjunctions in post titles, so I had to remove it. Sorry for the confusion.
