    Easy Keto Blueberry Muffins

    Easy Keto Blueberry Muffins are yummy, sweet,  low carb, gluten-free, and paleo muffins with berries.

    These easy keto blueberry muffins are made with coconut flour and are free of nut flour. 

    Coconut flour is very budget-friendly where I live, and I could purchase it at low prices at Grocery Outlet or big-box types of stores.

    Since coconut flour is very dense, you don't have to use it very much, and when baking desserts or muffins, it can add a little sweetness.

    I added the golden flaxseed meal or hemp seed meal for extra fiber, which also means a lower net carb count, yay!

    I used blueberries because it is what was available at the store. But you could most certainly use blackberries if they are in season or accessible to you.

    Easy Keto Blueberry Muffins

    Ingredients

    • ½ cup coconut flour sifted
    • 2 ½ tbsp golden flaxseed meal, or hemp seed meal
    • ½ cup low carb granular sweetener
    • 1 ½  teaspoon baking powder
    • 1 teaspoon apple cider vinegar
    • ⅔ cup unsweetened almond milk or coconut milk
    • 3 large eggs beaten
    • 3 tablespoon butter melted 
    • 1 teaspoon vanilla extract
    • ½ cup blueberries

    Directions

    1. Preheat oven to 350°F (177℃), and grease or line with muffin cups a 12 muffin pan. In a larger mixing bowl combine: coconut flour, flax meal, granular low carb sweetener, and baking powder. Mix together and set aside.
    2. In a second large mixing bowl combine: almond milk or coconut milk, melted butter, apple cider vinegar, and vanilla extract, mix together thoroughly. Add eggs and whisk together.
    3. Add the coconut flour mixture to the egg mixture and stir until thoroughly combined. Add the blueberries and gently fold in.
    4. Spoon batter into greased muffin pan or muffin cups to ⅔ full. Bake for 25 to 30 minutes or until tops of muffins are firm and starting to brown. Remove from oven, cool before removing from pan or muffin cups and serve.

      I don't have the granular sweetener on hand. Will it wreck the recipe if I use maple syrup or honey?

        Hi Chanel, using a liquid sweetener may make the muffins wetter in texture.

      I'm a huge fan of anything blueberry and these are just so scrumptious. I love the wholesome uniqueness of the ingredients, they different than any other blueberry muffin I have made. I can't wait to feed these to my favorite little people!
