Instant Pot Keto Smothered Pork Chops Cooking Times
Ingredients:
- 4 bone-in or boneless, average cut pork loin chops (about 1.3 lbs)
- 2 slices uncooked bacon, chopped
- 1 teaspoon dried thyme
- ½ teaspoon fine ground sea salt
- ¼ tsp ground black pepper
- 1½ tablespoon avocado oil or olive oil
- 2 cloves garlic, minced
- ⅔ cup sliced white mushrooms
- 1 cup beef broth or bone broth
- ½ tsp onion powder
- ½ tsp garlic powder
- ½ cup heavy cream or full-fat coconut milk (for dairy free)
- ½ tablespoon teaspoon fresh thyme leaves or minced fresh parsley to garnish
Instructions:
- Sprinkle each side of pork chops with thyme, salt, and pepper
- Press Saute and add the avocado oil or olive oil to the inner pot. Heat until the pot shows “hot” on the screen.
- Sear the pork chops on both sides for 2 to 3 minutes to just brown the sides in the inner pot. Remove the pork chops from the pot and set aside on a plate.
- While still hot add the chopped bacon, minced garlic, and sliced mushrooms to the pot and saute for about 3 to 4 minutes until garlic has softened and bacon is browning.
- Add the beef broth to the pot and scrape the bottom of the pot to deglaze. Stir in the onion powder and garlic powder. Press “Cancel” to turn off saute mode.
- Add pork chops back to the pot.
- Secure and lock the lid. Turn the pressure release handle to Sealing.
- Select Pressure Cook on High Pressure (Normal) and set the timer for 10 minutes for bone-in chops or 7 minutes for boneless chops by pressing the + or - buttons. *Check the chart below for Instant Pot cooking times and more options*.
- Once cooking time is done, let the pressure Naturally Release for 10 minutes (don’t touch anything for 10 minutes), then Quick Release the remaining pressure (carefully while keeping face away from steam and hands in protective oven mitts, turn steam release handle to Venting).
- Once all steam has released (the pin on the lid will drop and the lid will unlock), open the lid and remove only the pork chops, plate & cover to keep warm. Leave the mushrooms bacon and sauce in the pot and select Saute and heat until bubbling.
- Add the heavy cream or coconut milk to the sauce and stir. Continue to heat on saute until bubbling. Press “Warm” on the pot. Plate pork chops and pour the mushroom bacon sauce over the chops
- garnish with fresh thyme leaves or fresh parsley.

I loved the recipe. The pork chops came out so tender and juicy, and the flavor was wonderful. The gravy was delicious. But only one critical thing. The gravy came out more like soup than like a gravy. It was very thin. Next time I would use less bone broth and possibly add some thickener. But the taste of the gravy was delicious.

I think I need to do this with an easier N American food recipe.
What I appreciate about this recipe and how you approach your recipe is how you lead us through it, as to what buttons to press.
I will give this a run - bought a Costco pork tenderloin and sliced into 1.5" chops - should work fin for this

This is delicious. I used 8 thin bone in pork chops browned in two batches. I used Italian seasoning instead of thyme. I used one cup of cream, four slices of bacon and doubled the mushrooms. I used 1/2 teaspoon xanthum gum at the end to thicken the sauce.

I made this tonight for dinner. I tripled the recipe and used an entire package of bacon because my family LOVES bacon. 😉 I ended up with 11 pork chops about 3/4 inch thick before cooking. Cooked for 10 minutes and I probably could have gotten away with 8 minutes and releasing the steam immediately the Instant Pot timer was complete. The pork turned out tender yet cooked more than I was aiming for. I prefer to left the meat set in the sauce to finish cooking.
I used 1 can of full fat coconut milk and stirred. Next, I added 4 Tbsp of Arrowroot Flour to 1 cup of sauce in a separate cup and mixed well before adding to the sauce to thicken it. The sauce wasn't as thick as I was hoping, so I used my immersion blender to whip it up a bit. Perfect!!!

So instant pot clearly states that you should always add at least 18oz of liquid when pressure cooking (2.25 cups). Your recipe doesn’t include that amount of liquid so I’m wondering if you have w suggestions for how to get to that level of liquid. Thanks for your help!

It states that for a 6 quart IP: 1/2 cup to 1 cup is the minimum liquid amount unless you're cooking something that will absorb water. My Instant Pot cookbook & recipes were approved by Instant Pot, the Company.

I don’t usually comment, but I must say Stacey… This dish is fantastic! I spent the time to transfer the liquid (I put in nearly 2 cups of chicken stock) to a large saute pan to reduce it to about 2/3rds cup. I then whisked in 4 tablespoons of cream cheese (no cream), off heat and it became a perfect gravy!
I pored that luxurious gravy over both the thick boneless chops and steamed cauliflower (instead fo potatoes or rice) and not a drop was left at the end of the meal. Everyone raved at how good it was. Well done!

Hi! I made this tonight on my first try an IP! Once i placed everything back into the pot for pressure cooking time, i selected the "meat/stew, option. It forced a time of 35 on there. I could never adjust it to 7 or 9 minutes. I wasnt sure what to do. Looks tasty but scared to eat it. Any suggestions?

Hi Sara, I use the "pressure cook" or "manual button" on some models for that recipe, not the meat stew as it has a preprogrammed (not adjustable time) for stewing meats. I think it will be eatable but might be very overcooked done at that cooking time.

I was so excited about this recipe but my pork chops were super dry. I had it on pressure cook more which I think is the high setting and they were bone in and thick. I wonder if I do it at the normal setting for 8 min if they would be juicy. The flavor was great besides that so I'm definitely trying again!

Hi Megan, the setting is at High Pressure on the "NORMAL" setting, not the "More" setting. If you press the Pressure cook button or Manual button (depending on which model you have) only once it should go to pressure cook "normal" and adjust the pressure level button to high. I know the setting buttons can take some getting used to, as there are almost too many options.

Hi Amber, yay, great gift! It can but you would need to only double only the ingredients that are not liquid. the liquid amount would be the same. You would have to also sear the pork chops 3 at a time depending on size of chops and the IP size.

Hi Bambi, thank you so very much for your kind words. I use a 6 quart IP for a family of 4. I think 6 quart is the average size, but I have seen 8 quarts for larger quantities, and a small 3 quart for dips and appetizers. Most people recommend the 6 quart model for average usage.

Hi Barabara, you might need to lightly steam the radishes ahead of time in the Instant Pot or on the stovetop and then add them back to the Instant pot when pressure cooking the pork chops.

Hi Chrissy, doubling a recipe doesn’t require changing the cooking time. The cooking times are more dependent on the density and thickness of the ingredients (pork chops) rather than the weight.
