My teenage son actually ate 3 of these pork chops!

I still can't get over how much a skinny teenage boy can eat, but he had missed lunch that day and was apparently starving, lol.

My hubby was very sad that there was only one chop left by the time he came home from work, but honestly, my son thought he was being generous not eating the last one, lol.

    • 4 bone-in or boneless, average cut pork loin chops (about 1.3 lbs)
    • 2 slices uncooked bacon, chopped
    • 1 teaspoon dried thyme
    • ½ teaspoon fine ground sea salt
    • ¼  tsp  ground black pepper
    • 1½  tablespoon avocado oil or olive oil
    • 2 cloves garlic, minced
    • ⅔ cup sliced white mushrooms
    • 1 cup beef broth or bone broth
    • ½  tsp onion powder
    • ½ tsp garlic powder
    • ½  cup heavy cream or full-fat coconut milk (for dairy free)

    4. While still hot add the chopped bacon, minced garlic, and sliced mushrooms to the pot and saute for about 3 to 4  minutes until garlic has softened and bacon is browning.
    5. Add the beef broth to the pot and scrape the bottom of the pot to deglaze. Stir in the onion powder and garlic powder. Press "Cancel" to turn off saute mode.
    6. Add pork chops back to the pot.

Fantastic. I used fresh shiitake mushrooms from our garden. Also added a touch of xanthium gum to get a thicker gravy at the end.

This was delicious … I just thickened the sauce with a teaspoon of xanthan gum, as it was really runny and I included more mushrooms. A definite go-to 😀, thanks!

These are a lot like my German Jägerschnitzel I make except no onions and a little nutmeg.
But I make mine in a skillet then transfer and bake so this is an easier quicker way.

Really enjoyed this recipe and adapted it to be Whole30-compliant by using sugar free bacon. The issue I had was that the bacon didn’t brown that well, any advice on something (compliant) I could add to achieve that seared taste?

Oh, and my 2-year-old said "Mmm! Good!" This is definitely one of the best recipes I've made from Pinterest. A keeper, for sure!

Good recipe just a tad heavy on thyme for me. Also, I wish it would have been a thicker sauce. Next time I will use less thyme and add a Keto friendly thickener. Note, I said next time...it really was good.

This was great! We thickened up the sauce with a mixture of corn starch and heavy cream. I really enjoyed this because a lot of the keto recipes with cream can feel really heavy. This felt lighter and loved the thyme flavor.

I loved the recipe. The pork chops came out so tender and juicy, and the flavor was wonderful. The gravy was delicious. But only one critical thing. The gravy came out more like soup than like a gravy. It was very thin. Next time I would use less bone broth and possibly add some thickener. But the taste of the gravy was delicious.

Stacey, I assume you are Beauty and I (a guy) am the Foodie!
I won an instant pot in a golf tournament - shot a 74 - then I played the last 3 holes - HaHa!
I had my first foray with an Instant Pot trying to make an Indian dish -not bad but wound up with way too much liquid. I struggled with the directions - both instant pot and the Indian Chef
I think I need to do this with an easier N American food recipe.
What I appreciate about this recipe and how you approach your recipe is how you lead us through it, as to what buttons to press.
I will give this a run - bought a Costco pork tenderloin and sliced into 1.5" chops - should work fin for this
I will give this a 5* - not because I have made it but because you have made it easy - and I am sure it will be great. Who doesn't like pork chops? Okay, maybe that doesn't work in today's multi-cultural world - HaHa

This is delicious. I used 8 thin bone in pork chops browned in two batches. I used Italian seasoning instead of thyme. I used one cup of cream, four slices of bacon and doubled the mushrooms. I used 1/2 teaspoon xanthum gum at the end to thicken the sauce.

I made this tonight for dinner. I tripled the recipe and used an entire package of bacon because my family LOVES bacon. 😉 I ended up with 11 pork chops about 3/4 inch thick before cooking. Cooked for 10 minutes and I probably could have gotten away with 8 minutes and releasing the steam immediately the Instant Pot timer was complete. The pork turned out tender yet cooked more than I was aiming for. I prefer to left the meat set in the sauce to finish cooking.

I used 1 can of full fat coconut milk and stirred. Next, I added 4 Tbsp of Arrowroot Flour to 1 cup of sauce in a separate cup and mixed well before adding to the sauce to thicken it. The sauce wasn't as thick as I was hoping, so I used my immersion blender to whip it up a bit. Perfect!!!

So instant pot clearly states that you should always add at least 18oz of liquid when pressure cooking (2.25 cups). Your recipe doesn’t include that amount of liquid so I’m wondering if you have w suggestions for how to get to that level of liquid. Thanks for your help!

It states that for a 6 quart IP: 1/2 cup to 1 cup is the minimum liquid amount unless you're cooking something that will absorb water. My Instant Pot cookbook & recipes were approved by Instant Pot, the Company.

I don’t usually comment, but I must say Stacey… This dish is fantastic! I spent the time to transfer the liquid (I put in nearly 2 cups of chicken stock) to a large saute pan to reduce it to about 2/3rds cup. I then whisked in 4 tablespoons of cream cheese (no cream), off heat and it became a perfect gravy!

I pored that luxurious gravy over both the thick boneless chops and steamed cauliflower (instead fo potatoes or rice) and not a drop was left at the end of the meal. Everyone raved at how good it was. Well done!

Made this last night and it was delicious! Used cashew cream instead of HCW or coconut milk (wanted to keep it paleo but I don’t care for coconut milk)...I reduced the liquid for a few minutes before adding. the cream. SO GOOD. Will try with chicken next. Thanks for the great recipe!

Is there any substitute for the bacon? I forgot to buy it at the store and don’t have any on hand. I have some bacon bits, bacon flavored spices would either of those work?

You could make this with chicken and the times would depend on whether you use thighs, breast, bone-in or boneless and the thickness of the chicken. A chart with a general guide is here: https://instantpot.com/instantpot-cooking-time/

Hi! I made this tonight on my first try an IP! Once i placed everything back into the pot for pressure cooking time, i selected the "meat/stew, option. It forced a time of 35 on there. I could never adjust it to 7 or 9 minutes. I wasnt sure what to do. Looks tasty but scared to eat it. Any suggestions?

Hi Sara, I use the "pressure cook" or "manual button" on some models for that recipe, not the meat stew as it has a preprogrammed (not adjustable time) for stewing meats. I think it will be eatable but might be very overcooked done at that cooking time.

Looking forward to trying this. A friendly suggestion from a reader, though: I would prefer the printable recipe card not have pictures in it. I tried it and it would be 3 pages printed out and very costly to waste printer ink on pictures when you just need the recipe. Your pictures are beautiful, and I enjoy them in the blog post, but I don't need to print them out. Thank you.

Ps: I found a way to have instruction photos show on the card, but not show up in the print version. I know what you mean, my printer goes through ink so quickly and the cartridges are so pricey!

I was so excited about this recipe but my pork chops were super dry. I had it on pressure cook more which I think is the high setting and they were bone in and thick. I wonder if I do it at the normal setting for 8 min if they would be juicy. The flavor was great besides that so I'm definitely trying again!

Hi Megan, the setting is at High Pressure on the "NORMAL" setting, not the "More" setting. If you press the Pressure cook button or Manual button (depending on which model you have) only once it should go to pressure cook "normal" and adjust the pressure level button to high. I know the setting buttons can take some getting used to, as there are almost too many options.

I did add 2 tsp of Xantham gum after the bubbling of broth and cream to thicken a bit more and it turned out very good. Gravy consistentsy and texture. I had extra and used the gravy again last night for a different meal cause it was so tasty. Recipe was a great hit in my house. Feeling like more Chops very soon!

Hi Amber, yay, great gift! It can but you would need to only double only the ingredients that are not liquid. the liquid amount would be the same. You would have to also sear the pork chops 3 at a time depending on size of chops and the IP size.

This looks mouthwatering!! Some may say it's all about the pork, but for me it's all about these creamy mushrooms! I have pinned so I can make it later!

That creamy deliciousness and all of those beautiful mushrooms plus bacon. SO good! Pork chops is my husband's favorite, and we love using the IP, so this one is a hit!

If doubling the recipe do I need to adjust the cook time in the instant pot?

Hi Chrissy, doubling a recipe doesn’t require changing the cooking time. The cooking times are more dependent on the density and thickness of the ingredients (pork chops) rather than the weight.
