    Keto Beef Cheese Manicotti is simple to make, low-carb, Italian comfort food that has all the beefy cheesy goodness of high-carb manicotti.

    These manicotti rolls are made with super low-carb egg white wraps to replace the high-carb pasta.

    The Egg Life Egg White Wraps I use in the recipe are easy to find at Safeway, and Whole Foods in the egg section, and also Trader Joe's also has their own brand of egg white wraps.

    I love Italian food, but most Italian restaurants don't have a low-carb option and most of the time cooking Italian food at home is very time-consuming.

    This easy, low-carb cheat method of making an Italian classic manicotti dish is a time saver.

    Ingredients

    • ½ pound of Ground Beef
    • 2 teaspoons Olive Oil
    • 2 teaspoons Dried Minced Onion
    • ¼  teaspoon Salt
    • ¼ teaspoon Black Pepper
    • 1 package Egglife Egg White Wraps (6 plain or Italian egg wraps)
    • 1 ⅓ cups Whole-Milk Ricotta Cheese
    • 1 ½ cups Shredded Mozzarella Cheese, divided
    • ½ cup Grated Parmesan, divided
    • ½ teaspoon Garlic Powder
    • 2 teaspoons Dried Parsley
    • 2 Garlic Cloves, minced
    • 2 cups Marinara Sauce no sugar added, or homemade keto marinara sauce
    • 1 ½ tablespoon Butter, cut into pieces

    Instructions

    browning the ground beef

    Preheat the oven to 350℉ (180℃) and grease a 13 x 9 x 2-inch baking dish with olive oil. Heat a medium skillet over medium heat. Add ground beef, dried minced onion, salt, black pepper, and minced garlic. Saute until the meat browns, and the garlic is fragrant. Remove from the heat to cool.

    Mixing the cheeses.

    In a large bowl combine the ricotta, ½ cup of the mozzarella cheese, ¼ cup of Parmesan cheese, garlic powder, and the dried parsley. Mix together.

    Adding the beef to the cheese mixture.

    Using a slotted spoon add the cooled meat mixture into the cheese mixture and combine. Set aside.

    Add sauce to dish.

    Spoon 1 cup of the marinara sauce over the bottom of the prepared dish. 

    Fill the wraps with cheese mixture.

    Fill and roll up each of the egg white wraps with about four tablespoons of the cheese-meat mixture.

    Add rolls to the prepare dish.

    Arrange the stuffed rolls in a single layer in the prepared dish.

    Cover with marinara sauce.

    Spoon the remaining 1 cup of marinara sauce over them.

    Add remaining cheeses to the dish.

    Sprinkle with the remaining 1 cup of mozzarella cheese and the remaining ¼ cup of Parmesan cheese.

    Add butter to the top.

    Dot the entire dish with the butter pieces. Bake uncovered until heated through for 25 to 30 minutes.

    Bake manicotti until heated through.

    Let the manicotti stand for 4 minutes and serve.

    Hint: Using a rectangular 9 x 13-inch dish is much easier to work with than the oval-shaped dish I used in the photos. It was challenging to fit all the rolls into the oval dish, but my rectangular pan was missing, so I had to bend the rolls on the outer edges of the dish a little to fit.

    • Dot the entire dish with the butter pieces. Bake the manicotti uncovered until heated through for 25 to 30 minutes. Let the manicotti stand for 4 minutes and serve.

    Storage

    Store the cooked manicotti in a covered pan or sealed container in the fridge for up to 3 days. Reheat portions as needed.
