    Keto Crepe with Berries

    Keto Crepe with Berries is super simple to prepare with egg white wraps as crepes and filling the crepes with a yummy cheesecake-like cream and berry filling.

    These stuffed crepes are a tasty breakfast or dessert crepe low in carbs with only 5g total carbs for a serving of 2 stuffed crepes.

    The Egglife egg white wraps I use in the recipe are in the egg or refrigerated section of the grocery store.

    I used the plain egg white wraps, but you can also use the cinnamon egg white wraps in the recipe.

    This was inspired by my low-carb raspberry cream crepes recipe.

    If you want a more over-the-top dessert crepe, then top the crepe with a drizzle of sugar-free chocolate syrup.

    Ingredients for shopping

    Ingredients to make keto crepes.
    • 1 package Egglife Egg White Wraps (6 plain or cinnamon egg white wraps) or 6 homemade low-carb crepes 
    • 6 oz. Cream Cheese, full fat, softened
    • ¼ cup Sour Cream, full fat
    •  2 tablespoon Heavy Cream
    • ⅓ cup Low-Carb Confectioners Powdered Sweetener
    • ½ teaspoon Vanilla extract
    • 1 teaspoon Lemon Juice
    • ⅓ cup sliced Strawberries or Berries

    Garnish 

    • 1 tablespoon low-carb powdered sweetener
    • 3 tablespoon low-carb whipped heavy cream
    • 2  tablespoon chopped berries *optional

    Instructions

    In a large mixing bowl or stand mixer, beat the cream cheese, sour cream, heavy cream, powdered sweetener, vanilla, and lemon juice with an electric hand mixer until smooth and fluffy. Set aside.

    Heating the crepes.

    Heat a skillet over medium-high heat and grease with ½ tablespoon butter or oil unless the skillet is non-stick. Heat each egg white wrap for 15 to 30 seconds per side. Remove and repeat until all wraps are heated.

    Divide filling and berries among egg wraps or homemade low-carb crepes and roll up in wraps or crepes.

    Adding garnishes to the crepes.

    Sift powdered sweetener over crepes and garnish with a dollop of whipped cream and a few sliced berries if desired.

    Hint: When heating the egg white wraps, use a nonstick pan or lightly oil the pan. Be sure to only warm them for a few seconds on each side and not brown or burn them.

    Substitutions

    • Egg white wraps - instead of egg white wraps, you can also use homemade keto crepes.

    Variations

    • Chocolate Syrup- For an extra yummy dessert crepe, top the stuffed crepes with a drizzle of sugar-free chocolate syrup.

    Storage

    Store the unstuffed egg white wraps in a zipper bag in the fridge until the expiration date on the package; store any unused filling in a sealed container in the fridge for up to 4 days.
