I used an extra delicious, aged, cured hard Spanish cheese from Queso Mahon Menorca that is from the beautiful Island of Menorca Spain.
Mahon Menorca Cheese is available in 3 delicious varieties:
- Tender: A soft, yellowish-white colored cheese very little crust. Soft and creamy texture with a milky buttery flavor and an acidulous touch. (21- 60 days).
- Semi-Cured: A firm but easy to cut cheese with an ivory color and an orange crust. It has a milky tasty and more developed flavors with a buttery nutty taste. (2-5 months).
- Cured: A firm, hard, mature cheese that has a very developed flavor, aroma, and a complex intense aftertaste. Hints of old wood, tanned leather or a wine cellar. A treat for cheese connoisseurs. (more than 5 months).

Keto Meatball Cheese Crisps Recipe
Ingredients:
- 1 ½ cup grated Mahon Menorca cured hard cheese or can use shredded parmesan cheese (for the cheese cups)
- ½ lb ground beef
- 1 ½ tbsp golden flax meal
- 1 lg egg, beaten
- 2 ½ tbsp tomato sauce
- ¼ cup grated Mahon Menorca cured hard cheese, or can use shredded Mozzarella cheese
- ½ tbsp Italian seasonings
- 1 teaspoon garlic powder
- ½ tsp sea salt
- ¼ teaspoon black pepper
- 2 tablespoon tomato sauce (for garnish)
- 1 tablespoon sliced black olives, *optional garnish
- ½ tablespoon finely chopped fresh parsley *optional garnish

Directions:
- Preheat oven to 400 F and line a baking sheet with tin foil. Set aside.
- In a silicone muffin pan or can use a greased muffin tin, add about 2 tablespoon of the grated cheese to the bottom of each cup in the muffin pan.
- Bake at 400 F for 10 to 12 minutes or until melted and starting to brown on edges.
- Remove muffin tin from oven and set aside to cool and harden into a solid crisp.
- In a large mixing bowl combine ground beef, flaxseed meal, tomato sauce, beaten egg, ¼ cup grated cheese, Italian seasonings, garlic powder, sea salt, and black pepper. Knead with your hands to mix.
- Form about 12 meatballs with your hands using 1 to 1 ½ heaping tablespoons of meat mixture per meatball.
- Place meatballs on the lined baking sheet and bake at 400 F for 20 minutes or until cooked through.
- Remove from oven and set aside for a minute.
- If you used a silicone muffin pan for cheese crisps then just lightly push the underneath bottom of each cup up to remove crisps. If using a muffin tin then use a butter-knife to pry edges and gently lift each crisp out of the pan.
- Place each meatball on a cheese crisp, top with a ½ teaspoon tomato sauce, an olive slice & sprinkle with optional parsley and serve.
