    Keto Strawberry Cream Pie Bars-

    Keto Strawberry Cream Pie Bars are low-carb, gluten-free, and so divinely sweet and creamy.

    Keto Strawberry Cream Pie Bars are incredibly yummy. They have a buttery pie crust, a creamy, fluffy strawberry gelatin filling, and a smooth, sweet sour cream and fresh berry topping.

    Only the pie crust needs 12 to 15 minutes in the oven; the rest is just mixed, spread, and refrigerated. 

    These beauties taste like a combination of strawberry pie, cheesecake, and that strawberry cream gelatin salad my mom used to make in the 70's.

    I used a natural, gluten-free, GMO-free, vegan, erythritol, and stevia sweetened brand of strawberry gelatin called: Natural Simply Delish Strawberry Jel Dessert.

    Keto Strawberry Cream Pie Bars

    Ingredients:

    Pie Crust:

    • 1 cup fine almond flour
    • 1 tablespoon erythritol granular sweetener (swerve)
    • ¼ cup butter softened

    Strawberry Cream Filling:

    • 1 package natural sugar-free strawberry gelatin, like this one
    • 4 ounces cream cheese
    • ¾ cup heavy cream
    • ½  tbsp Swerve granular sweetener

    Topping:

    • ½ cup sour cream
    • 1 tablespoon  Swerve granular sweetener
    • 1 teaspoon vanilla extract
    • 1 ½ cup hulled sliced strawberries

    Directions:

    1. Preheat oven to 350 F (176 C) and grease an 8x8 inch baking pan.
    2. In a medium mixing bowl combine all the pie crust ingredients and mash together with a fork. Press dough with hands into the prepared pan and bake for 12 to 15 minutes.
    3. Remove from oven and cool. Refrigerate pie crust for 20 minutes.
    4. In a stand mixer and using an electric hand mixer combine all the strawberry cream filling ingredients. Mix on medium until smooth. Set aside. Rinse, hull and slice strawberries and set aside.
    5. In a medium mixing bowl combine: sour cream, 1 tablespoon sweetener, and ⅛ teaspoon vanilla extract, stir until blended. Set aside.
    6. Gently spread strawberry cream filling over the pie crust layer. Spread sour cream mixture over the strawberry cream layer.
    7. Arrange sliced berries on top of the sour cream layer and refrigerate for 20 minutes or more.
    8. Slice into 9 squares and serve.

        Denisse, I sliced 3 bars across and 3 bars down which makes 9 bars. So, make 3 slices going horizontal across the pan and then 3 slices going vertical across the pan.

      Holy cow! Made this for a game night cause hubby and I just started keto a week ago. Our game friends always bring sweet treats so I wanted something we could have so we wouldn’t be tempted to eat the bad things. This was amazing. Our game friends actually loved it too. The whole thing was devoured quickly.

            Yes, Trish, you can but be aware it can add more carbs to the recipe depending on the number of berries.

        This is so delicious! I’ve made it several times. One question I have, it says to add a whole box of the Jell-O mix. But the first time I did it, it seemed way too strong. So I always add just 2 tablespoons and it’s perfect! Does your recipe need to be corrected?
