Keto Taco Stuffed Mini Peppers-

Keto Taco Stuffed Mini Peppers are low carb, gluten-free, grain-free with a paleo option.

Mini bell peppers stuffed with taco seasoned ground beef and topped with optional cheese, olives,  sour cream, or paleo sour cream.

Keto Taco Stuffed Mini Peppers are a low-carb, bite-sized, taco flavored snack or appetizer with just a slight amount of heat from the mini bell peppers.

These are fairly easy to stuff with taco seasoned ground beef and bake for game day snacking or any time you crave tacos.

Even my son, who is opposed to most vegetables, like these satisfying tasty taco snacks.

He is also the reason I didn't put chopped avocado these! I will never understand how can he dislike avocado.

Keto Taco Stuffed Mini PeppersPin

Keto Taco Stuffed Mini Peppers-

Ingredients:

  • 8 mini bell peppers, cut in half lengthwise and seeds removed
  • ½ tbsp olive oil
  • ½  lb ground beef
  • 1  tbsp taco seasoning spice mix
  • ⅓ cup tomato sauce
  • 3 tablespoon water
  • ½  cup shredded cheddar cheese *optional omit for paleo
  • 2 tablespoon black olive slices
  • ¼ cup sour cream, or paleo sour cream
  • 1 tablespoon chopped fresh cilantro *optional

Recommended Products:

 Directions:

  1. Preheat oven to 350°F and line a large baking sheet with aluminum foil.
  2. Slice each pepper lengthwise Remove seeds from peppers. Brush peppers with oil. Set aside.
  3. In a 10-inch skillet, cook beef over medium-high 5 to 7 minutes, stirring occasionally, until beef is browned.
  4. Drain beef and return to the skillet. Stir in taco seasoning mix, tomato sauce, and water. Cook over medium heat 5 to 10 minutes, stirring occasionally.
  5. Fill each pepper with beef mixture and place on the prepared baking sheet. Bake 13 to 15 minutes.
  6. Remove peppers from oven. Sprinkle with optional cheese and sliced olives and return to oven for 1 to 2 minutes, until the cheese is melted.
  7. Remove from oven.  Top each with a teaspoon of optional sour cream and serve.

    Wow. Lovely.I added mushrooms to help to bulk it up.
    Plus hubby & I added Tabasco sauce.
    Even mum in law who is 92 yrs old ate it all withoutt the cheese & tabasco sauce.
