Making Celeriac Root Pasta Noodles-
Celeriac Root Pasta Noodles are wonderful veggie noodles that are paleo, low carb, gluten-free, and vegan.
Celeriac root pasta noodles are paleo, low carb, grain-free, gluten-free, and have the best taste and texture of all the veggie noodles I tried. Spaghetti squash would be a close second on that list.

You can make wonderful tasting spiralizer vegetable noodles from celeriac root. Even though this vegetable happens to be the "hands down" ugliest, least attractive vegetable in the whole produce department!
Don't let the outside of this vegetable scare you away, or you'll be missing out on a hidden gem.
Once it is peeled with a vegetable peeler of it's most hideous looking outer skin, it really looks like a potato.
Celeriac root makes great spiralized pasta, french fries, and is great whipped up into a celeriac mash or used instead of potato in soups.
Much lower in carbs and higher in fiber than conventional noodles. Perfect for paleo, low carb, keto, and primal diets.
Excellent with any favorite pasta sauces (marinara, alfredo, pesto, cheese sauce, and Asian style sauces).

Celeriac Root Pasta Noodles-
Ingredients:
- 1 Celeriac root, peeled and cut in fourths
- 5- 7 cups water, enough to cover noodles
- ⅛ teaspoon sea salt
Kitchen Tools:
- Vegetable peeler
- Vegetable Spiralizer, like this one
- Medium to large saucepan
Directions:
- Using a vegetable peeler, peel the dirty outer skin and hairy stuff off the celeriac root until it is white in color.
- Cut into fourths. Put each large piece into the spiralizer and turn into noodles.
- Once spiralized, bring a pot of water and pinch of salt to a boil.
- Add celeriac noodles and boil for 2 to 3 minutes until just soft. Remove from heat and drain water from noodles.
- Can pat noodles dry a little with a paper towel if desired.
- Serve with a sauce of choice.

I love celeriac. I cook it mashed, French fried, scalloped, in stir fry dishes, in soups and hash. I never thought to use as noodles and can't wait to try it.. you can find celeriac at Krogers stores but they call it celery root. It is also fairly easy to grow in the garden from seed. It does needs soil with good drainage. I got my seed from a seed catalog.

Ken, I found this beast in the produce section at a Raley's grocery store, but have seen them at Whole Foods, and other natural food grocery stores. Some stores will call it "Celery Root", but it is not usually not next to the celery & is most likely found next to the turnips, parsnips, and other root vegetables.

I am not sure if I am reading this correctly. It says 1/2 c is one serving @ 5 Net Carbs? Why not Pasta Zero? It is Shirataki Spaghetti with 1 Net Carb, (4 Carbs, 3 Fiber) I used to buy Dreamfiels Pasta because it advertised 5 digestible carbs per serving, but I don't see that on the packaging anymore. Still, says for low carb diets. Past Zero has 15 calories and it tastes good. I found it at Walmart for under $3. It has 2.5 servings per bag. I also love spiralizing the zucchini!

Katan, yes Shirataki noodles are also good low carb option as well. I just like the texture and taste of celeriac noodles.

It is in the nutritional data above the printable recipe card that it is 1 cup vegetable noodles. The recipe card plugin only does weights in grams and that is why I put data in above the card in cups.
