These No Bake Key lime Pie Bites are paleo, low carb, keto, dairy-free, gluten-free and vegan. They are wicked yummy and so easy to make.
No Bake Key Lime Pie Bites are so easy to make and ridiculously yummy! My Hubby told me that these are the best dessert I have ever made him.
Which is crazy, because I have made him some very complicated, beautiful, culinary baking masterpieces for special occasions, and yet these no-bake, easy, freezer treats are his favorite.
I don’t know whether I should be pleased or totally insulted.
So, now he tells me that key lime is his favorite pie! I have known him for over 30 years, and I could have sworn his favorite pie was an apple.
Wow, you think you know a person, and then they change their favorite pies on you, lol.
However, he is correct that these taste completely awesome. The fact that they are super simple and involve no baking or cooking is a bonus!

No Bake Key Lime Pie Bites
Ingredients:
Pie Crust Coating Ingredients:
- ¼ cup macadamia nuts
- 1 teaspoon lime zest, use a micro-plane like this one
- 2 tablespoon sweetener of choice: Low-carb granular sweetener, or coconut sugar for paleo
- Pinch sea salt if nuts are unsalted
Key Lime Pie Bites Ingredients:
- ½ cup macadamia nuts, raw or dry roasted
- ½ cup sunflower seeds, raw and shelled
- 3 tablespoon lime juice
- 1 teaspoon lime zest
- 1 teaspoon vanilla extract
- ⅓ cup coconut oil, melted
- ¼ cup sweetener of choice: low-carb sweetener, or coconut sugar for paleo
- ¼ cup unsweetened coconut milk
- 1 tablespoon coconut flour
Kitchen Supplies:
- Food processor
- Micro-plane for grating lime zest
- Citrus juicer hand held
- Candy mold or ice cube tray
Directions:
- In a food processor mix all the pie crust coating ingredients. Pulse until a coarse, grainy flour forms. Pour pie crust coating mixture into a bowl and set aside.
- In the food processor add all the key lime pie bite ingredients, and pulse until a thick and creamy nut butter or hummus-like texture forms.
- Grease or oil a candy mold or ice cube tray. Fill the mold tray with the creamy key lime pie mixture.
- Freeze the candy molds with key lime pie mixture for 30 to 40 minutes, or until solid and firm.
- Remove key lime pie bites from mold, and roll them in the pie crust coating in the bowl.
- Keep these and store in the freezer in a container, as they don’t get hard frozen and stay firm but creamy even if in the freezer for days.

I’m so excited to make these! But the only sweetener I can have is stevia at the moment. Will it throw off the texture if I replace the coconut sugar/swerve with liquid stevia?

Hi Ashlie, stevia alone can have a slightly bitter aftertaste. It is best when combined with another low carb sweetener like erythritol or monkfruit sweeteners.

I always get so confused when recipes call for coconut milk. Is this the coconut milk in a can or the one in the box that is usually refrigerated?

Hi Pam, in this recipe I used the unsweetened one in the carton that goes in the fridge once opened, but either canned or the refrigerated carton kind can be used in this recipe. I only specify canned coconut milk, if only that kind it can be used. You could even use unsweetened almond milk in this recipe.

Marilyn, I'm thinking you could use your hands to mold and place on a baking sheet in the freezer to set. It might be messy for your hands though.

Hi Nanabella, I used the Ninja Express Chop (NJ110GR) 3 cup model. I bought it at Target. It is on Amazon for around $22. It is easier then dragging out the big processor.

Usually use macadamia nuts and sunflower seeds, but have also used cashews and sunflower seeds. I'm not sure if pecans would work.

Hi Stacey. I'm a newbie baker. Just to show you that I'm truly a newbie, I hadn't touched my oven in like 25 years, though I've been trying for about a year now (well, I lie, I touched it to store pots) :). The FIRST thing that drew me to these: NO BAKE! The SECOND, Key Lime! I have a question:
The "1/3 cup coconut oil, melted." Is that once it's melted it measures 1/3 cup, or the 1/3 cup is the solid measurement ()doesn't matter what the melted amount is?
