One Pan Pork Chop Bacon Brussels Sprout Skillet is an easy to prepare, low carb, paleo, one pan wonder meal.
Don’t you love it when a complete meal can be made in one skillet that includes the meat and the veggies in a delicious sauce?
I was surprised at how much my hubby and kids loved this skillet meal, and they even ate all the brussels sprouts! If it gets my family to eat the veggies then that is a win in my book.

One Pan Pork Chop Bacon Brussels Sprout Skillet
Ingredients:
- 1 lb boneless or bone-in pork chops (4 to 5 chops)
- 1 ½ tablespoon olive oil, or avocado oil
- 1 teaspoon sea salt, divided
- ½ teaspoon pepper, divided
- ⅔ cup chicken broth
- 1 tsp Dijon mustard
- ½ tbsp balsamic vinegar
- ¼ cup unsweetened applesauce
- ¼ cup onion, minced
- 2 cloves garlic, minced
- 1 ¼ cup Brussels sprout halves
- 1 teaspoon fresh chopped rosemary, or dried rosemary
- ½ tablespoon fresh chopped sage leaves
- 2 slices bacon, cooked and crumbled
Directions:
- Heat a large skillet over medium-high heat add ½ tablespoon olive oil.
- Add pork chops and sprinkle with ½ teaspoon salt and ¼ teaspoon pepper and sear each side of pork for 5 to 6 minutes until browned. Remove pork from skillet and set aside.
- In a medium-size mixing bowl combine: chicken broth, remaining salt and pepper, Dijon mustard, balsamic vinegar, and apple sauce. Whisk together and set aside.
- In the same skillet over medium-high heat add the remaining 1 tablespoon olive oil, onion, garlic, Brussels sprout halves, rosemary and sage leaves. Stir fry until veggies are lightly browned and softened for about 5 minutes.
- Add pork chops back to the skillet, and pour the chicken broth sauce mixture over the pork chops and Brussels sprouts. Sprinkle with crumbled bacon.
- Heat until sauce is bubbling, turn down the heat to low, cover and simmer for 5 to 8 minutes or until pork is done. Serve.

Cheryl, you can use forzen Brussels sprouts if you defrost them before cooking.

Holy heck! Wow - we are in love with this dish! I've been trying to find ways to cook Brussels sprouts for ages but never loved any of the past recipes. This, though, is like heaven! We aren't massive pork fans in our house hold so we use chicken thighs in place of pork. This is so good it's likely to become a weekly dinner dish!

We tried this tonight and were very pleased with the results. I doubled the amount of Brussels sprouts (we love them) and reduced the amount of applesauce by 1/2 to keep the carb level lower. Julie, you could leave out the balsamic vinegar if you want to. I love it and buy it at Trader Joe's. But there are many flavors in the recipe, so the balsamic won't be a deal breaker to omit.

I made this for supper tonight and it was delicious! I am only a week into trying to go keto and am wondering about the carbs vs. sugars. Wouldn't the sugar be counted as a carb? Thanks for the yummy recipe and for any insight you can offer on my question.

Thank you Suzanne. The sugars grams in the nutritional data are already included in the total carb amount. The sugar amount lets you know how many of the carbs come from sugars, as not all carbs are sugars. Hope this clears up the confusion on carbs and sugars-
