    Oven Fried Breaded Broccoli Bites

    Oven Fried Breaded Broccoli Bites are an easy, low carb, gluten-free, paleo, shake and oven bake style recipe that makes broccoli taste so good!

    These Oven Fried Breaded Broccoli Bites are a low carb, paleo, grain-free, easy to make snack or side dish.  

    These are made "shake & bake" style with a super tasty low carb gluten-free breading.

    My family loved dipping these in low carb ranch dressing (use homemade paleo ranch or store-bought ranch dressing). They are so simple and make broccoli taste very yummy.

    Even my picky, non-veggie eater child liked these. I love recipes that get my family to eat more veggies.

    Broccoli has so many nutritional benefits, and can also help prevent obesity, heart disease, diabetes, and cancer.

    Oven Fried Breaded Broccoli Bites - Paleo, low carb and gluten freePin

    Oven Fried Breaded Broccoli Bites Recipe:

    Ingredients:

    • 12 medium-sized broccoli florets, lightly steamed
    • ⅓ cup almond flour
    • ⅓ raw sunflower seeds no shell, ground (I used a Magic Bullet to grind these into powder)
    • 1 teaspoon garlic powder
    • ½ sea salt
    • ½ teaspoon paprika
    • ¼ teaspoon dried parsley
    • 1 tablespoon parmesan cheese *optional, omit if dairy-free
    • 2 eggs, beaten
    • ½ tablespoon butter, melted * omit if dairy-free
    • 1 tbsp avocado oil or olive oil
    • 1 medium to large (1 quart) zippered bag

    Directions:

    1. Preheat oven to 400 F, and use the avocado or olive oil to cover the bottom of a baking sheet.
    2. Rinse and dry broccoli. Lightly steam or microwave broccoli for a few minutes until al dente (lightly cooked but firm). Set aside.
    3. In a Magic bullet type blender or processor, grind and pulse raw shelled sunflower seeds until a powdered texture forms.
    4. In the zippered storage bag add: sunflower seed powder, almond flour, garlic powder, sea salt, paprika, parsley, and optional parmesan. Close bag and shake around to mix. Set aside.
    5. In a  small mixing bowl, beat 2 eggs. Add optional melted butter and mix into the egg mixture.
    6. Dip a broccoli floret into the egg mixture and place it into the zippered bag with the almond flour mixture. Close bag and shake until covered in the breading. Remove broccoli floret and place on the oiled baking sheet.
    7. Repeat with each floret.
    8. Bake for 12 minutes, turning broccoli over with tongs halfway through cooking time. Then turn the broiler on low for 1 to 2 minutes to get the coating more crisp. Check at one minute to see if browning. * careful not to burn.
    9. Remove, cool only slightly and serve warm. You can dip these in low carb ranch dressing or eat them plain for a delicious snack.

      This recipe sounds delicious, and I can't wait to try it! Just curious if the coated broccoli would reheat well in the microwave? Also, have you ever tried eating it cold or room temp and dipping it? Just wondering if that would be an option also. Thanks for the recipe!

        Tara, I'm not sure about the microwave as it tends to make the coating not crisp. I don't think I would like it cold (my personal taste), but room temp might be okay.

      Do you think this would taste ok with walnuts in place of sunflower seeds?? I don't have any and want to make this tonight. Sounds and looks delish!!!!
