A favorite, insanely yummy, easy to make treat recipe from my Easy Low Carb Snack Recipe Book. Made with flavors inspired by the Girl Scout Cookie.
A chocolaty fudge truffle bomb with a caramel coating and coconut sprinkles. The recipe has paleo and low carb options depending on which sweetener of choice is used.
These are just as tasty as any candy bar but are made with healthy ingredients.
After freezing the fudge bombs in a cake pop pan, candy mold, or ice cube tray. Pour caramel sauce over the top and sprinkle with finely shredded coconut.

Samoa Fudge Bombs Ingredients:
Fudge Bomb Ingredients:
- 3 ½ tablespoon unsweetened cocoa powder
- 2 ½ tablespoon butter, melted
- 2 ½ tablespoon coconut oil, melted
- 3 ½ tablespoon sweetener of choice: Swerve sweetener or other low carb sweetener equivalent, or use coconut sugar for paleo option
- 2 tablespoon heavy cream or unsweetened coconut milk
Caramel Coating Ingredients:
- 2 ½ tablespoon butter
- 2 ½ tablespoon sweetener of choice: Erythritol Swerve sweetener for low carb, or use coconut sugar for paleo
- 2 tablespoon heavy cream, or coconut milk for paleo
- ⅛ teaspoon molasses, or low carb maple syrup, or yacon syrup
- ⅛ teaspoon vanilla extract

Directions:
- In a large mixing bowl combine all the fudge bomb ingredients. Mix together thoroughly. Pour or spoon mixture into a lightly greased candy mold, or ice cube tray, or a cake pop pan.
- Freeze for 15 minutes or until firm.
- in a small saucepan over medium heat melt the 2 ½ tablespoon butter for the caramel coating.
- Once melted add the 2 ½ tablespoon sweetener, 2 tablespoon heavy cream, and ⅛ teaspoon molasses or low carb maple syrup, yacon syrup. Stir and heat until bubbling. Remove from heat and stir in ⅛ teaspoon vanilla extract. Let caramel sauce rest for a couple of minutes until it thickens a little.
- Remove fudge bombs from the freezer and place them on a baking sheet lined with parchment paper or wax paper.
- Drizzle or spoon caramel sauce over truffle bombs and sprinkle with shredded coconut.
- Serve. Store in a covered container in the fridge or freezer.

- GARNISH:
- 1 tablespoon unsweetened shredded coconut

Hi Riley, I have not tried dairy-free butter, but I have seen recipes use vegan butter to make caramel sauce.

Made a batch of these last night. I didn't have any molasses so I just used the sugar-free maple flavored syrup that I already had. My caramel is a bit lighter in color, but the flavor is wonderful. All together the chocolate, caramel, and coconut make a perfect bite!
Next time I will use a slightly larger candy mold and will put them together a little differently than the recipe says in an attempt to keep the coconut from falling off so easily. My plan is to put the coconut in the mold first, then caramel, then chocolate.

Leslie, the molasses is such a tiny amount for the whole recipe, that the carb count is nominal. But you can also replace the molasses with low carb sugar free maple syrup or yacon syrup (both are keto friendly), as it is just to color the caramel.

For the caramel, would Splenda or stevia work? Husband needs to reduce his carbs but he can't use erythritol in ANY quantity without undesirable digestive consequences. (Seriously, he can't use Truvia in his coffee, but Pure Via is fine.) I know that sugar alcohols are popular because they provide bulk and act a lot like sugar, so I don't know if other sweeteners would work here.

I'm not sure about stevia or splenda in this, but can your husband have monk fruit sweetener? It is low carb & would work in this. This brand has no sugar alcohols in it: http://amzn.to/2fhOjpJ (careful, some have a blend of eyrthitol and monk fruit). You would also use a smaller amount, as I think it is sweetener.

Brandi if you use a sugar free brown sugar sweetener alternative like "Truvia brown or Lankanto Golden" sweetener alternative, then you don't need to use the molasses.

I have accounted for all ingredients, in the amounts indicated in the recipe, and I am already up to 8 carbs per serving and haven't included the Swerve or cream in the topping. How does this recipe get down to 1 net carb?

These have major yum factor. By far, my favorite fat bomb. For sweetening, I used Just Like Sugar, and I'd add an extra tbsp to attain the right amount lf sweetness. Do NOT skip the coconut...it really enhances the flavor.
