    Crock Pot Luau Pork with Cauli Rice-

    Crock Pot Luau Pork with Cauli Rice is a paleo and low carb, savory, smoked Hawaiian pork dish with amazing flavor!

    Wouldn't it be nice if you could come home to a luau in your crockpot?

    My favorite food at any Hawaiian luau is the shredded roasted pork.

    It is so smoky and juicy. I have been trying to replicate that flavor at home in my crockpot.

    But was not quite as successful, until I found this Hawaiian black lava sea salt.

    Hawaiian black sea salt has a delicious smokey flavor that tastes like you've been roasting your pork in a pit for hours.

    Another favorite low-carb pork recipe we also love is Easy Keto Shake & Bake Pork Chops.

    I also used some hickory smoked natural, nitrate-free bacon, minced garlic, and natural liquid smoke (optional).

    Find a  brand of hickory liquid smoke that has no chemicals, msg, or additives. One that just contains liquid smoke.

    But the recipe does not need it if you are unsure about using it.

    The black lava sea salt and bacon add enough smoke accents. I just like the extra smoke flavor in mine.

    Place the bacon and garlic on the bottom of the crockpot.

    Poke holes into the roast with knife and rub the roast with black lava sea salt.

    Place the roast in the crockpot, and add optional liquid smoke.

    Cover and cook on high for 4 to 6 hours.

    Turn to low and cook for 2 hours. Pull pork apart with two forks (should fall apart easily if done) and stir.

    You can add some shredded cabbage if desired.

    Cover and cook on low for 30 minutes.

    RECIPE AND DIRECTIONS BELOW:

    Ingredients:
    • 3 lb pork roast (shoulder or butt)
    • 4 slices Bacon, hickory smoked and nitrate free.
    • 1 ½ tablespoon Hawaiian black lava sea salt * could use Hawaiian red sea salt too. can also use pink sea salt as well.
    • 5 to 6 cloves garlic, minced.
    • 2 tbsp hickory liquid smoke  * optional, can omit.

    Cauli Rice:

    • 3 cups cauliflower.
    • 2 tablespoon organic or homemade chicken broth.
    • ¼ teaspoon garlic powder.
    • ⅛ teaspoon sea salt.
    Directions:
    • Set crockpot to high setting, and line the bottom of the crock pot with the raw bacon slices. Sprinkle minced garlic over the top of the bacon.
      Trim a little fat off the bottom of a roast if desired.
    • With a sharp knife, poke and stab holes throughout the roast.
    • Pour 1½  tbsp of black lava sea salt into small pinch bowl and use fingers to rub salt all over roast (will be a charcoal mess on your hands, but it washes off easily).
    • Place roast, fat side down, into the crockpot. Add optional liquid smoke over the top of the roast, and cover the crockpot. Cook on high for 4 to 6 hours ( longer time for bone-in roast), then on low for 2 hours. It could also cook on low for 8 hours to 10 hours (if your roast has a bone in it, then it will need 8 to 10). Once cooking time is up, take a fork and pull apart the roast in the crock pot (it should fall apart easily if done). Stir shredded pork and bacon in crockpot and cover. Cook on low for 30 minutes.
    • If you choose to make cauliflower rice, now is the time to start making it-steam cauliflower for 20 minutes or microwave for 5 minutes. Put slightly cooled cauliflower into a food processor and add chicken broth, garlic, and sea salt.
      Process until rice texture forms.
    • Place a scoop of the cauli rice onto a plate and add a scoop of shredded luau pork.
      Serve and enjoy.

    Ingredients
     
     

    • 3 lb Pork Roast, shoulder or butt

      Will this work with a tenderloin as well?

        The shoulder or roast butt works the best in this recipe. I think a tenderloin can work but maybe a little drier.

        Cricket, I think my recipe card plugin is acting up again. I thought it was fixed, but I think it is randomly loading really slow or not loading at all. I can't seem to get it to happen for me or the tech guys. I will look into it. Sorry that is frustrating. I may have to take the recipes out of the printable cards until we can figure out the issue. I think it was loading slowly, and just appeared after you commented, but it is not involved with the comment section. Thank you for letting me know, as I thought it was fixed.

      Do you throw the bacon away or cut that up and mix with pork mixture?

        Lisa, Don't throw away the bacon 🙁 It will fall apart when you pull the meat apart and stir with fork. There will be little chunks of it in there and it's yummy. The only thing you would throw away is any bone, if your roast has one. It just falls off and can be removed.

        Hi Jos, the serving size is 1/3 cup or 2.6 ounces. So sorry, I thought I typed in the serving size. Thanks for noticing that. Will fix that right now.
