     Double Chocolate Nut Butter Cookies Low Carb-

    These Double Chocolate Nut Butter Cookies are gluten-free chocolate chip nut butter heaven and they have a low carb and paleo option. You can make these with peanut butter or almond butter for paleo.

    Double Chocolate Nut Butter Cookies Low Carb are gluten-free, grain-free, and have paleo and low carb options.

    Crisp chocolate peanut butter or almond butter cookies with chocolate chips. Simple to make and only a few ingredients.

    These taste wonderful and are perfect for dipping in a cold glass of almond milk, or even in your coffee or tea.

    I never dipped my cookies in milk when I was a kid and I still don't, but I do dip cookies in tea or coffee.

    Double Chocolate Nut Butter Cookies:

    Ingredients:

    • 2 ½ tablespoon coconut flour
    • 2 ½ tablespoon cocoa powder
    • ⅔ peanut butter or almond butter (unsweetened)
    • 6 tablespoon butter
    • ⅔ cup granular sweetener of choice: Swerve for low carb, or coconut sugar for paleo
    • 1 egg
    • 1 teaspoon vanilla extract
    • ½ cup chocolate chips (sugar-free or paleo ones), like Lilly's stevia sweetened chips for low carb, or Enjoy Life chips for paleo

    Directions:

    1. Preheat oven to 350 F, and line 2 baking sheets with parchment paper or silicon baking mats. In a large mixing bowl with electric hand beater or  a stand mixer, cream butter and sweetener until well combined.
    2. Add nut butter, egg, and vanilla extract to the mixing bowl and beat, using a rubber scraper to scrape the sides until combined.
    3. In a separate combine: coconut flour,  and cocoa powder. Stir together.
    4. Add flour mixture to the nut butter mixture and beat until combined.
    5. Add chocolate chips and hand stir into the dough.
    6. Place tablespoon size spoonfuls across cookie sheet 1 ½ inches apart.
    7. Bake for 12 to 15 minutes, or until cookies are browned on the bottoms.
    8. Remove and cool for at least 20 minutes or longer, or until cookies firm up and set.

      I'm a cookie dunker. My drink of choice is coffee although my kids like to dunk their cookies in milk. Chocolate and peanut butter? Yum. I'm a cookie monster so these look perfect.
