Easy Chili Faux Mac Skillet is a grain-free, low carb version of Chili Mac. An easy, all in one skillet meal that is low carb with paleo options. My husband’s favorite casserole as a child was Chili Mac. A combination of chili, ground beef, and macaroni noodles. Which inspired me to make a noodle free, low carb, healthier version of chili mac.
I replaced the macaroni with diced veggies, and the canned chili with ground beef, diced tomatoes, and organic, starch-free taco seasonings. I topped each serving with cheese, avocado, and sour cream. But you can leave off the cheese and sour cream if you are paleo or dairy-free.
This was so easy and made all in one skillet. My kids were suspicious and giving it the evil eye, but once they tried it, they loved it! My husband loved it too, although he took as much coaxing to try it as the kids, lol.

Easy Chili Faux Mac Skillet Ingredients:
- 1 ½ lb ground beef
- 2 tbsp Spicely® Organic Taco Seasoning Mix, I used this low carb, starch & gum free brand, or can use this home made recipe ( use the beef seasoning mix in my nacho pie recipe)
- ½ tbsp golden flax meal * optional, for thickening
- ½ teaspoon garlic powder
- ½ tsp sea salt
- ⅔ cup water
- 1 ½ cups of diced tomatoes, canned
- 1 cup cauliflower, minced (finely chopped)
- 1 cup zucchini, diced
- ⅔ cup grated cheddar cheese *optional, omit for dairy free
- ½ of an avocado, chopped * optional
- 3 tablespoon sour cream * optional, or use this dairy free paleo sour cream
Directions:
- In a large skillet (12 inch), over medium-high heat brown the ground beef. Once the beef is browned, add 2 tablespoon taco seasoning mix, ½ teaspoon garlic powder, ½ teaspoon sea salt, ½ tablespoon flax meal, and 1 ½ cups diced tomatoes with the liquid, ⅔ cup water. Stir and mix together until combined.
- Add to skillet: 1 cup minced cauliflower and 1 cup diced zucchini. Heat on medium-high for a few minutes until it comes to a boil. Turn heat to medium-low, cover, and simmer for 30 minutes, or until veggies have softened.
- Top with optional grated cheese, diced avocado, and a dollop of sour cream. Super easy!

Instructions
