These Easy Keto Golden Chaffles are my favorite, simple version of a low carb waffle.
They are crisp on the outside and fluffy soft on the inside and so simple to whip up.
Chaffles are a very popular keto trend and for a good reason. They have the most delicious taste and texture.
I had to come up with an improved version of these ever-popular keto waffles.
What are Chaffles?
Chaffles are low-carb waffles usually made with just egg and cream cheese, or egg and shredded mozzarella cheese mixed and poured onto the waffle iron. So, I'm thinking the name came from (cheese + waffles = chaffles)

I added just a few more ingredients to my version to improve them a bit and make them less eggy.
The results were no less than wow! Even my teenage boy could not believe it! He said these are the best waffles ever!
Easy Keto Golden Chaffles
Ingredients:
- 4 tbsp Almond flour (blanched)
- 4 Large Eggs
- 2 ⅓ cups Shredded Mozzarella Cheese (not the fresh soft kind)
- 1 teaspoon Vanilla extract
- 1 tablespoon Erythritol sweetener
- 1 ½ teaspoon Baking powder
Directions:
- Preheat and grease waffle iron.
- In a medium-size mixing bowl combine: almond flour, sweetener, and baking powder. Mix until combined.
- Add eggs, cheese, and vanilla extract and mix until thoroughly mixed.
- Add portions of mixture to waffle iron and spread to almost the edges of iron. Close waffle iron and cook until waffle is golden.
- Use a fork of a spatula to gently lift waffle from iron. Repeat until the remaining batter is used.
- Serve with butter and sugar-free maple syrup, or with low carb powdered sweetener and a small amount of berries.
TIP: You can also freeze the waffles in a zippered bag with parchment paper between each waffle & defrost in the fridge and reheat in the oven during the week.
