Easy Keto No Churn Strawberry Ice Cream is low in carbs and simple to make. A super creamy and sweet ice cream made with fresh strawberries.
Easy Keto No Churn Strawberry Ice Cream is low carb, super simple to make, sweet, creamy, and absolutely delightful.
You don’t need an ice cream maker or special tools, or weird ingredients to make this yummy treat.
My family was shocked at how delicious this creamy strawberry ice cream is. They liked it even better than the ice cream parlor ice cream.
I used ripe strawberries that my lovely neighbor brought to me from the farmer's market.
So if your strawberries taste a little unripe or a bit sour, you may need to add a bit more sweetener to yours. Just taste after blending then add a bit more to taste.
This recipe is so simple, as you basically add the ingredients to a blender, blend, pour into a loaf pan, and freeze.

I just made it for the 1st time. Amazingly easy!! Licking the tools before putting it in the freezer can limit the amount of ice cream you get. LOL It is absolutely delicious!!
My husband is about mid stage dementia and the nutritional program I have him in recommends he be on Keto so I have to be one step ahead of him to be sure when he reaches for something that I have the right foods available. I am so grateful for you amazing people who experiment, perfect and share.

So good! Thank you for sharing. The only thing I did was to substitute coconut extract for vanilla. I do that for a lot of things as I think it gives a richer flavor. Do you have to put it in a metal pan? Could I use a silicone instead? Or does the metal make a difference?
Stacey says
Thank you, Sharon, you can use a silicone pan. I just use the metal pan because it gets cold a little quicker.
Rebekah says
Do you have to use the granular sugar or would the confectioner's swerve work?

Ice cream maker

Yes, I would think it would. Mine is broken, so I can't try it.

I have tried many ice cream recipes......seems like the Swerve makes the ice cream much too hard. Have you any suggestions as to using a different sweetener that would still allow the ice cream to be scoop able??? thank you
Stacey says
I used Swerve and didn't have that happen but there are liquid monkfruit sweeteners like Ketose Sweet +: https://amzn.to/2IN6nGw
Audrey Lawrence says
I heard Bocha Sweet keeps ice cream from getting too hard. I haven't tried it yet but I want to.
Stacey says
Thanks, Audrey, I will look for that.
Barbara Been says
Bocha Sweet taste exactly like sugar consistency is the same. You can find it on their website and on Amazon. We use it for everything.
Priscilla says
Allulose is the best sweetener for everything, but especially for ice cream! No cooling aftertaste and doesn’t turn icecream into a brick!
Andrea says
Can I use frozen strawberries?
Stacey says
Yes, but you should defrost them to make blending them easier.
Margo says
I’m curious. Sour cream in ice cream? What does it do in the ice cream? Is it a binder of sorts or just makes it more yummy?
Stacey says
Margo, I believe it makes it taste even better and makes it even more creamy in texture. But I have made it without the sour cream (was out of it and I didn't want to go to the store) and it was still very good.
Adriana Gutierrez says
I didn’t have sour cream but used cream cheese. Hopefully it works out ok. Unfrozen flavor was great!
Darryl says
I don’t do Keto myself but I suppose I can add another sweetener that I can tolerate - any suggestions?
Stacey says
Thanks, Darryl. Perhaps coconut sugar or honey.

I tried to leave a comment and it wouldn't accept my email address which is weird cause it was valid so I am trying again. I just wanted to know if you can substitute another fruit such as blueberries?
Stacey says
Your comment went through.
Patricia says
Can other fruit, such as blueberry be used instead of strawberry?
Stacey says
Yes, I would think blueberries would be a nice flavor. You may need to adjust the sweetener to a little more depending on the sweetness of the berries.

Thank you, Holley. Yes, I dropped and broke my ice cream maker a couple months ago. The good news is - more space in my cupboards.
