    Easy Keto No Churn Strawberry Ice Cream is low in carbs and simple to make.  A super creamy and sweet ice cream made with fresh strawberries.

    Easy Keto No Churn Strawberry Ice Cream is low carb, super simple to make, sweet, creamy, and absolutely delightful.

    You don't need an ice cream maker or special tools, or weird ingredients to make this yummy treat.

    My family was shocked at how delicious this creamy strawberry ice cream is. They liked it even better than the ice cream parlor ice cream.

    I used ripe strawberries that my lovely neighbor brought to me from the farmer's market.

    So if your strawberries taste a little unripe or a bit sour, you may need to add a bit more sweetener to yours. Just taste after blending then add a bit more to taste.

    This recipe is so simple, as you basically add the ingredients to a blender, blend, pour into a loaf pan, and freeze.

    Easy Keto No Churn Strawberry Ice Cream-

    Ingredients:

    • 2 cups heavy cream
    • ¾ cup sliced strawberries, hulled and sliced
    • ⅓ cup Swerve granulated low carb sweetener
    • 2 tablespoon sour cream
    • ½ teaspoon vanilla extract

    Recommended Products:

    Directions:

    1. Rinse and dry strawberries, hull, and slice in half.
    2. Add all the ingredients to a blender or processor and blend until smooth (there should still be tiny strawberry chunks).
    3. Pour mixture into an (8 to 9 inch) metal loaf pan and us the back of a spoon to spread the mixture across the pan evenly.
    4. Freeze for 3 ½  to 5 hours in the freezer until firm but scoopable and serve. If ice cream is frozen longer and becomes too hard to scoop, then defrost in the fridge for 20 to 30 minutes until soft again.

      Do you think Monkfruit Sweetener could be used in place of the swerve? That is all that I have or Pyure Bakeable Stevia Brand?

      I just made it for the 1st time. Amazingly easy!! Licking the tools before putting it in the freezer can limit the amount of ice cream you get. LOL It is absolutely delicious!!
      My husband is about mid stage dementia and the nutritional program I have him in recommends he be on Keto so I have to be one step ahead of him to be sure when he reaches for something that I have the right foods available. I am so grateful for you amazing people who experiment, perfect and share.

      So good! Thank you for sharing. The only thing I did was to substitute coconut extract for vanilla. I do that for a lot of things as I think it gives a richer flavor. Do you have to put it in a metal pan? Could I use a silicone instead? Or does the metal make a difference?

      I have tried many ice cream recipes......seems like the Swerve makes the ice cream much too hard. Have you any suggestions as to using a different sweetener that would still allow the ice cream to be scoop able??? thank you

            Bocha Sweet taste exactly like sugar consistency is the same. You can find it on their website and on Amazon. We use it for everything.

        Allulose is the best sweetener for everything, but especially for ice cream! No cooling aftertaste and doesn’t turn icecream into a brick!

      I’m curious. Sour cream in ice cream? What does it do in the ice cream? Is it a binder of sorts or just makes it more yummy?

        Margo, I believe it makes it taste even better and makes it even more creamy in texture. But I have made it without the sour cream (was out of it and I didn't want to go to the store) and it was still very good.

        Yes, I would think blueberries would be a nice flavor. You may need to adjust the sweetener to a little more depending on the sweetness of the berries.
