Mojo grilled steak is low in carbs, paleo, and whole30; you will love how easy it is to whip up the marinade & grill the steak to perfection using the outdoor grill or an indoor grilling pan.
I simply adore my cast iron stovetop grilling pan and use it all the time. I seem to get better results with it than using my ancient, barely working outdoor gas grill.
Yes, I need a new outdoor grill, but that is a disagreement that the hubby & I can sort out later, lol.
While vacationing in Puerto Rico in 2011, we discovered a super tasty sauce called Mojo sauce.
Mojo sauce is usually an oil-based garlic & citrus sauce that is served as a dip for tostones or a sauce on meats or on mofongo (a plantain mash).
I was inspired to make a low carb, Whole30 skirt steak marinade version of the sauce and used most of the ingredients, flavors, and spices.

Keto Grilled Mojo Skirt Steak
Ingredients:
- 1 ½ lbs beef skirt steak, cut into 4 smaller pieces
Marinade:
- 1 lime, juiced
- ¼ cup avocado oil, or olive oil
- 2 cloves garlic, finely minced
- 1 teaspoon ground cumin
- ¼ teaspoon dried oregano
- ¼ teaspoon onion powder
- 1 teaspoon sea salt
- ½ teaspoon freshly ground black pepper
- ¼ teaspoon red pepper flakes
Garnish (optional):
1 tablespoon chopped fresh cilantro leaves
Directions:
- Add all marinade ingredients to a Mixing bowl and whisk. Pour marinade into a zippered freezer bag.
- Add skirt steak to bag, zip bag, and massage marinade into meat in the bag.
- Place the bag in the fridge and let marinate for 2 hours.
- For Outdoor Grill: Heat outdoor grill and place the meat on the hot side of the grill for 4 to 6 minutes on each side or until well-charred and a meat thermometer inserted into their center reads 115°F to 120°F for medium-rare or 125°F to 130°F for medium.
- For Indoor Grill Pan: If using an indoor grilling pan, heat pan with 1 tablespoon avocado oil over medium-high to high heat and once the pan is hot, grill steak for 4 to 5 minutes per side until charred depending on the thickness of the meat.
- Let rest for 5 to 10 minutes before cutting meat.
- Serve, or slice against the grain and serve. Can also fill low carb cheese shells, lettuce cups for paleo & Whole30, or low carb tortillas for tacos, or can also serve on top of a salad. Garnish with optional cilantro

Okay, you've convinced me. I must go to Puerto Rico, for real. This steak is a.m.a.z.i.n.g!! It marinated about four hours (I worked later than intended), and I used my gas grill. I served it with low carb tortillas, spinach, a couple Cherry tomatoes, shredded cheddar, cilantro and avocado. The flavors absolutely danced in my mouth - yummers!
