    Keto Key Lime Pie Parfaits

    Keto Key Lime Pie Parfaits maybe my best, easiest, quickest, no-bake, keto dessert yet.

    A 2 or 3 ounce shot glass or small dessert jar filled with a low carb nutty crumb pie crust layer alternated with a delicious creamy key lime pie filling layer.

    This creamy, dreamy treat is unbelievably low carb, high in healthy fat, and tastes just like a high carb key lime pie!

    Keto Key Lime Pie Parfaits

    Best of all, it can be prepared in minutes and consumed as soon as it put into the jars & no waiting for it to set up in the fridge.

    It comes out of the mixing bowl thick & creamy.

    Ever since I made this for my hubby and kids, they have been asking me daily to make it again!

    Keto Key Lime Pie Parfaits

    INGREDIENTS

    Crumb Layer

    • 6 tbsp almond meal or almond flour (coarse ground)
    • 1 tbsp powdered erythritol confectioners sweetener
    • ¼ tsp vanilla extract
    • ⅛ tsp sea salt
    • 1 tbsp butter, melted

    Key Lime Cream Filling

    • 8 ounces cream cheese (full-fat block style), softened
    • 3 ½ tbsp heavy whipping cream
    • ⅓ cup powdered erythritol confectioners sweetener
    • 1 tbsp butter, melted
    • ½ tsp vanilla extract
    • ½ tsp lime zest (finely grated lime peel using a Microplane)
    • 2 ½ tbsp juice of freshly squeezed lime or key lime

    Directions

    Crumb Layer

    1. In a medium-size mixing bowl, combine the almond meal, erythritol, vanilla, salt, and butter. Mix until all ingredients are combined and form a crumble.

    Key Lime Cream Filling

    1. In a separate large mixing bowl, combine the cream cheese, heavy cream, powdered erythritol, melted butter, lime zest, and lime juice. Using an electric hand mixer, beat the ingredients until the mixture is whipped smooth and forms a whipped frosting texture (this can take up to 6 minutes).
    2. Add 1 tbsp crumb to the bottom of 4 (2 to 3 ounce) shot glasses or small dessert jars. 
    3. Add 2 tbsp of the key lime cream mixture over the top of the crumb layer in each jar.
    4. Add ½ tbsp of additional crumb mixture to the top of the key lime cream layer in each jar. 
    5. Top that last crumb layer with 2 tbsps Key lime cream mixture in each jar. Serve. Store any unused parfaits in the fridge.

    • Top that last crumb layer with 2 tbsps Key lime cream mixture in each jar. Serve. Store any unused parfaits in the fridge.
