Malibu Dijon Chicken Asparagus Skillet is a delicious, low carb, gluten free, saucy chicken and asparagus dish.
Malibu Dijon Chicken Asparagus Skillet. An all in one skillet chicken recipe with ham and swiss in a tangy creamy dijon mustard sauce with chopped asparagus.
This recipe combines two favorite recipes in one tasty skillet dinner. A meal that will impress even your fussy, non low carb friends or family members.
After dinner and against my better judgment, my older adult kids talked me into watching a somewhat scary movie with them last night.
Even though it was fairly late at night when the movie was over, my daughter and I had to stay up later and watch a comedy skit or two before we could go to sleep. We did this so we would not have the scary movie in our brain right before going to sleep. I believe this is my nightmare prevention technique, but usually I never watch those kinds of movies.

Malibu Dijon Chicken Asparagus Skillet-
Ingredients:
- 4 skinless boneless chicken breast halves (1 lb to 1.5 lb)
- 1 tbsp butter
- ¼ tsp sea salt
- ¼ tsp black pepper
- ⅔ cup chicken broth
- ⅓ cup sour cream
- 1 ½ tbsp dijon style mustard
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp dried parsley
- ¼ tsp thyme
- ⅔ cup chopped asparagus
- 4 slices smoked ham thin sliced, I used nitrate free uncured ham
- 4 slices Swiss cheese
- ⅛ tsp red pepper flakes * optional
Directions:
- Melt 1 tbsp butter in a large skillet. Salt and pepper chicken breasts and pan sear over medium high heat in skillet with melted butter for about 5 to 6 minutes per side or until browned. Remove chicken from skillet and set aside.
- In the same skillet add: chicken broth, sour cream, dijon mustard, garlic, onion powder, parsley, and thyme. Whisk together until thoroughly mixed. Bring to a boil and add back in the seared chicken breasts, and chopped asparagus.
- Top each chicken breast with a slice of ham, and spoon some of the sauce in pan over the top of chicken. Turn heat to low, cover skillet and cook for 7 to 10 minutes or until chicken is done.
- While chicken is still hot, place a Swiss cheese slice on each piece of chicken and spoon some sauce over it.
- Sprinkle with optional red pepper flakes. Serve.

Malibu Chicken! I love it. What a great recipe. I don’t like to watch scary movies before bed, either. I’m the one who tends to internalize what I watched last and dream/think/process it all night. I haven’t tried watching a comedy skit afterwards. Thanks for the tip.
