Paleo Chocolate Mint Pudding

A rich creamy chocolate pudding with mint accents.

Paleo Chocolate Mint Pudding- Low Carb & PaleoPin

Paleo Chocolate Mint Pudding is a grain free, starch free, creamy, chocolate mint pudding with the flavor of “Junior Mints”.  This recipe includes a low carb version, depending on sweetener of choice that is used.

There is also a dairy free option.  I used gelatin and egg yolk as the thickener in this pudding. But no need to worry, as the pudding is cooked on the stove top before refrigeration, so the yolk will be cooked into the pudding.

I love to use gelatin in recipes, because gelatin contains collagen which promotes weight loss, healthy joints & bones, healthy skin, hair and nails. So this pudding is like an edible beauty treatment,  and a healthy way to satisfy your chocolate mint candy cravings.

This rich and creamy pudding is fairly easy to make and would be fantastic in a parfait using whipped cream or coconut cream and chocolate chips.  I use grass fed gelatin (where to buy it) in many of my recipes,  because of these amazing health benefits:

  • Promotes weight loss
  • Promotes healthy joints and bones
  • Promotes healthy  skin
  • Can improve the quality of  hair and nails
  • Assists with exercise recovery

    Hello!
So I have a fresh mint plant I would love to use for this recipe. Is there any way to sub the mint extract with fresh mint (muddled?) and, if so, how? Thank you!v

Caelin, I think you can make your own mint extract if you have a mint plant: http://wholenaturallife.com/how-to-make-homemade-peppermint-extract/

What did I do wrong? ion a separate bowl, I added the cold water to the gelatin and it completely turned into a solid. It doesn't look right if I am going to add it to the simmering pot of chocolate mix and not let it be lumpy. Does it liquefy again when its heated in the chocolate?

If it sits too long it will solidify, but I think it should melt into the chocolate.

This was really good. A lot of keto dessert recipes are really difficult or have pretty exotic ingredients. This one was easy and the ingredients are readily available. Delicious. Thank you!

Keira, yes you can omit egg yolk and add more gelatin. I'm not exactly sure how much more gelatin to add, but possibly an additional tsp or two.

I have been craving chocolate pudding the last couple of weeks. I have all of these ingredients in my cupboard. I should really be getting ready for bed, but I'm so tempted to go make pudding. Maybe for breakfast ...

LOVE gelatin desserts. I made a raspberry cream pie with gelatin recently, may have to try this too!
