Slow Cooker Coffee Roasted Beef
Grain free, paleo and low carb.
Slow Cooker Coffee Roasted Beef is an easy, savory, pot roast with veggies that is grain free, low carb and healthy. Made with a flavor enhancing coffee marinade. Don’t worry, you can use decaf, if you are avoiding caffeine or have active children, lol. The coffee really brings out the flavor of the roast. I added some onions, celery, parsnips, and butternut squash to the roast for delicious veggie side dish. I love how the slow cooker makes the meat so tender and juicy, even if I accidentally overcook it.

Ingredients:
- 3 lb roast of beef
- 1 cup brewed coffee or decaf
- ½ cup beef broth, gluten free organic, or homemade
- 3 tablespoon GF Worcestershire sauce, or for paleo use coconut aminos
- 2 tsp arrowroot powder + 2 tablespoon cold water
- 4 cloves garlic, peeled and minced
- 1 tbsp smoked sea salt (like this one), or can use sea salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- ¼ tsp celery seed * optional
- 1 ½ tbsp avocado oil or olive oil
- ⅓ cup onion, chopped
- ⅓ cup celery, chopped
- ¼ cup parsnips, chopped,
- ⅓ cup butternut squash, chopped
Directions:
- In a small bowl combine: smoked sea salt, black pepper, paprika, and celery seed. Stir together. Set aside.
- In a pinch bowl mix arrowroot powder and cold water. Set aside.
- In a medium sauce pan over medium high heat combine: coffee, beef broth, and Worcestershire sauce or coconut aminos. Heat to low boil and add arrowroot water slurry and mix in. Add minced garlic and onion. turn heat down to medium and stir for 2 minutes. Remove from heat.
- Brush avocado oil or olive oil all over roast using a pastry brush. Rub roast all over with the salt paprika seasoning mix made earlier.
- In a large frying pan over high heat, sear both sides of entire roast until a browned crust forms. Remove roast from frying pan and place in the crock pot. Pour coffee mixture from saucepan over the roast.
- Toss the chopped veggies into the crock pot. Cover and cook for 8 hours on low or 4 - 6 on high.

Lynn, Yes, you can use a little little corn starch (if you can have or tolerate corn), or potato starch, which is probably harder to find that arrowroot.
