    This recipe uses pork rinds instead of traditional corn chips. The pork rinds will give you that crisp crunch you are craving when you want nachos.

    Don't worry; you can still enjoy all your favorite nacho toppings. I love to make these for lunch or dinner!

    My son & hubby happily gobbled a batch of these nachos for lunch yesterday.

    These are also perfect for serving with low-carb margaritas on a girl's night, mom's night, game day, or adult get together when it is safe to socialize again. 

    Keto Beef Taco Nachos

    Ingredients:

    • ½  lb Ground Beef
    • 2 teaspoon Taco Seasoning, I used this one (it's keto-friendly) or make homemade
    • 2 tablespoon Tomato Sauce
    • 2 tablespoon water
    • 1 bag (4 ounces) Pork Rinds
    • 1 ½  cup Shredded Cheddar Cheese
    • ½ of a whole Avocado, chopped
    • 4 tablespoon Sliced olives * optional
    • 4 tablespoon full fat Sour Cream  * optional
    • 1 ounce pickled sliced jalapenos * optional

    Directions:

    1. Preheat oven at 350℉ (177℃), and line or grease a baking sheet.
    2. Use a large skillet over medium heat and add the ground beef. Break up the meat with a wooden spoon while cooking. Cook the ground beef thoroughly, until browned and no longer pink.
    3. Drain any excess grease from the skillet. Then return to the stove and reduce the heat to low.
    4. Add the 2 tablespoon tomato sauce, 2 tablespoon water, and 2 teaspoon taco seasoning. Stir together until the meat is coated in the sauce.
    5. Cover and allow to simmer for 5 minutes.
    6. Arrange pork rinds on the prepared baking sheet and top with taco meat, olives, and shredded cheese and Bake for 5 to 8 minutes, or until the cheese has melted. 
    7. Remove from the oven and top with avocado, sour cream, jalapenos and hot sauce if desired. Plate and serve.
