    Chicken Pesto Tomato Bites Low Carb is a wonderful flavor-filled snack or appetizer that is gluten-free and keto.

    Chicken Pesto Tomato Bites Low Carb-

    Chicken Pesto Tomato Bites make a wonderful flavor-filled appetizer or snack that is low carb and gluten-free.

    I used my homemade pesto sauce recipe in this recipe.

    But a gluten-free store brand like this one that is GF & Dairy Free also works well with this recipe.  

    This recipe reminds me of a pesto chicken pizza but without the crust, the work, or the carbs! Not very many ingredients and very little cooking involved.

    Easily have these tasty bites ready for game day snacking or a healthy lunch.

    Campari tomatoes or cocktail-sized tomatoes work best for these as they are small enough for appetizers but larger than cherry tomatoes so they have room for the filling.

    You could also use 4 bigger-sized tomatoes for a meal instead of the 12 snack appetizer-sized tomatoes.

    Chicken Pesto Tomato Bites Low Carb & Gluten FreePin

     Chicken Pesto Tomato Bites Low Carb-

    Ingredients:

    • 12 Campari (cocktail sized) tomatoes (bigger than cherry tomatoes but smaller than your average tomato on the vine.)
    • ⅔ cup cooked chicken, finely chopped 
    • ⅓ cup pesto sauce, my homemade pesto recipe or can use  this pesto sauce
    • 1 ½ tablespoon mayonnaise
    • ⅓ cup mozzarella, grated *optional

    Recommended Products:

    Directions:

    1. Slice just the tops off of the tomatoes. Using a spoon scrape and scoop out all tomato pulp and seeds. Set aside tomato shells.
    2. In a saucepan over medium heat combine: cooked finely chopped chicken & pesto sauce. Heat for 5  minutes or more until chicken is heated.
    3. Add mayonnaise and stir. Remove from heat.
    4. Fill tomato shells with chicken pesto mixture and sprinkle with grated cheese. The cheese should melt if the chicken is still warm. You can also use a kitchen torch. very lightly and quickly over the top to melt the cheese. Serve immediately.
