    Ingredients for shopping

    • 1 Medium White Onion
    • 5 Tablespoons Almond Flour
    • One Tablespoon Coconut flour
    • 1 Large Egg
    • One Tablespoon Heavy Cream
    • ½ Cup Crushed Pork Rinds
    • Salt to taste

    See recipe card for quantities.

    Instructions

Peel and slice the onion width-wise in half-inch-thick rings. Break apart the larger rings and remove the small center parts for other preparations.

Preparing the onion to make onion rings.

Set 3 bowls side by side, the first one containing the almond flour mixed with coconut flour, the second with the egg and whipping cream mixture (whisked together), and the third with the crushed pork rinds.

Dip the onion rings into the almond-coconut flour and coat.

Transfer to the egg wash, take to the pork rinds, then go back to the egg mixture and return to the pork rinds again for extra breading and crispier results.

Dipping the onion rings in the breading.

Place the onion rings on a greased Air Fryer basket. May need to cook in batches depending on the size of the air fryer.

Cook for 15 minutes at 425ºF (200ºC) until they are crispy but tender inside.

They should not brown too much during this process unless you spray a little cooking spray before air frying it.

Serve keto air fryer onion rings with low-carb ketchup, BBQ sauce, ranch dressing, or other dips.

Hint: If you can't find crushed pork rinds then it is easy to crush regular pork rinds yourself by putting them in a bag and smashing them with a rolling pin or mallet.

    Substitutions

    • Heavy Cream - instead of heavy cream you can use unsweetened coconut or almond milk to make this paleo and dairy-free.

    Variations

    • Spices - You can also add garlic powder, paprika or other favorite spices to the low-carb breading mix.
    • Cheesy- add a tablespoon of parmesan cheese to the breading mixture for a cheesy version.

    Equipment

We used an Air Fryer for this recipe.

    Storage

Store the cooked onion rings in a sealed container in the fridge for up to 5 days. Reheat for a few minutes in the air fryer, toaster oven, or oven just until crisp again.

My husband's face lit up like a little kid when he saw I was making these as a side for dinner. I used a spicy-flavored pork rind which gave them a little kick!! They were so crunch and delicious, thanks for the recipe.
