    Instructions

Mixing the dry ingredients fordonut holes.

Whisk almond flour, whey protein powder, low-carb sweetener, baking powder, salt, and xanthan gum.

Add wet ingredients to dry for making the donut holes.

Add sour cream, melted butter, and the hot water to the almond flour mixture.

    Forming a dough.

Smash and stir with a fork until a dough forms.

    Forming the dough balls.

Divide the dough into 14 equal pieces and roll each piece into a ball with your hands.

    Making the keto donut holes.

    Set aside.

    Heating the oil.

Add avocado oil to a small non-stick skillet and heat over low to medium heat. Add enough oil to cover the donut hole almost halfway (about ½ inch deep).

    Frying the donut holes.

Once the oil is hot, add about three of the donut holes at a time and fry on each side until golden brown, using a spoon or spatula to gently turn the donut holes around in the oil.

    Removing the donut holes.

Remove the donut holes from the oil using a slotted spoon once they are browned on all sides.

    Set aside keto donut holes.

Place them on a paper towel-lined plate. Repeat until all donut holes are cooked.

    Mixing the glaze.

In a small mixing bowl, add the glaze ingredients. Mix until the ingredients are well combined.

Roll the donut holes in the glaze.

Add each donut hole to the glaze bowl and roll around to cover in the glaze.

Remove donut holes from the glaze.Pin

Remove and place on a clean plate. Repeat until all donut holes are glazed.

Let the donut holes cool, and let the glaze dry.

Hint: Be sure to use an unsweetened, unflavored whey protein powder, as other protein powders can melt or fall apart when frying. I used avocado oil for frying the donut holes because it has a high smoke point. Other oils can burn, so make sure the oil you use has a high smoke point.

    Tips

The keto donut holes may not maintain their round shape while turning and frying, but that's fine (mine ended up cube-shaped).

    Variations

    • Powdered Sweetener Donut Holes - Instead of making the donut glaze, you could roll the keto donut holes in a low-carb powdered sweetener.
    • Cinnamon Donut Holes - You can skip the glaze and roll the donut hole in a mixture of low-carb sweetener and cinnamon.

    Equipment

    Small Frying pan

    Storage

Store leftover donut holes in a covered container and keep them at room temperature for up to three days, or store them in the freezer for up to a month. If frozen, heat and defrost in the microwave for 10-15 seconds.

Do you think these would work if baked in an oven instead of fried? I realise they would taste more cakey.

Hi Joanna, I did try the recipe in my air fryer/convection oven, which would be similar to baking, and they turned out like cake donuts.
