Ingredients

For the pork
- ½ Red Bell Pepper, chopped
- ½ medium-sized Zucchini Squash, cubed
- ½ medium-sized Onion, chopped
- 10.5 oz (⅔ lb) Pork Roast, cubed (pork stew meat)
- ½ teaspoon Sea Salt
- ½ teaspoon Black Pepper
- Two tablespoons Almond Flour
- Three tablespoons Avocado Oil
- Two tablespoons sliced Scallions, for garnish (optional)
For the Keto Sweet and Sour Sauce
- Two tablespoons Tomato Puree
- Two tablespoons Tamari Sauce or Coconut Aminos
- Two tablespoons Rice Vinegar
- ½ teaspoon Chicken Bouillon Powder
- ½ tablespoon Low-Carb Sweetener, or adjust to taste

In a small bowl, prepare the sweet and sour sauce by whisking the sauce ingredients. Taste for sweetness and add more sweetener if needed. Set aside.

Sprinkle salt, pepper, and almond flour evenly over the pork roast cubes. Toss to coat.

Heat 2 tablespoon of avocado oil in a frying pan over medium-high heat and add the seasoned pork roast cubes.
Cook on all sides for 5-6 minutes until browned. Remove the pork from the pan and reserve.

Add 1 tablespoon of oil and all the vegetables to the same pan. Cook for 5 minutes until they are crisp-tender.

Add the cooked pork back into the pan and stir everything together.
Pour the sauce over the mixture and cook for a minute or two, ensuring the sauce thoroughly coats the ingredients.

Sprinkle freshly sliced scallions, if using, and serve.
Substitutions
- Chicken- instead of pork stew meat, you can use boneless, skinless chicken cut into pieces and make sweet and sour chicken.
Storage
Store cooked leftovers in a sealed container in the fridge for up to three days and reheat before serving.
