- 1 ¾ cups Blanched Fine Almond Flour
- ¾ cup Granulated Low-Carb Sweetener
- One tablespoon of Baking Powder
- ¼ teaspoon Salt
Other Ingredients
- 1 cup Cranberries fresh or frozen
- Three Eggs
- ½ cup full-fat Sour Cream or plain Greek Yogurt
- Six tablespoons Butter, melted
- Two tablespoons of Orange Juice, freshly squeezed, use a citrus juicer
- Two teaspoons of Orange zest, use a citrus zester or microplane
- Two teaspoons of Orange Extract
- ½ cup Sugar-Free White Chocolate Chips * optional

Whisk the dry ingredients in a large bowl and break up any clumps. Set aside.
Chop the cranberries and set aside.
Whisk together the eggs, yogurt or sour cream, melted butter, orange juice, orange extract, and orange zest in a second large bowl until smooth.
Add the dry ingredients to the wet ingredients and mix togetther until fully combined.
Gently fold in the chopped cranberries.
Cover the bowl with plastic wrap and let the batter sit at room temperature for 20 minutes or in the fridge overnight.
Preheat the oven to 400℉ (200℃). Line a standard muffin pan with paper baking cups or grease a silicone pan.
Fill each muffin cup about ¾ full with the muffin batter using a large spoon.
Gently press the white chocolate chips into the tops of the muffin batter in each cup.
Bake for 18-22 minutes until golden and a toothpick inserted in the center comes out clean.
Let cool in the pan for 10 minutes.
Transfer the muffins to a wire rack to cool. Serve.
Hint: Covering the muffin batter bowl with plastic wrap and letting it sit at room temperature for 20 minutes or in the fridge overnight allows the batter to hydrate and for the flavors to intensify.
