    Ingredients

    Pumpkin French Fries ingredients.
    • 2 Mini Pumpkins, peeled, seeded and cut into ½ -inch slices
    • 2 tablespoons Olive Oil or Avocado Oil
    • 1 teaspoon Paprika
    • ½  teaspoon Garlic Powder
    • ¼  teaspoon Dried Oregano Leaves
    • ¼ teaspoon Dried Sage Leaves
    • Salt and  Black Pepper, to taste
    • Fresh Parsley, for garnish (optional)
    • Grated Parmesan (optional)

    Instructions

    Prepping the pumpkins.

    Preheat your air fryer to 375°F (190°C) or the oven (if using the oven) to 425℉ (220℃) while you prepare the pumpkin.

    Wash, dry, peel, and remove and scrape out the seeds of the pumpkins (you can save the seeds for roasting later on if desired). 

    Mixing the oils and spices.

    Slice it into ½ inch fries. Try to cut uniform thickness to ensure an even cooking. 

    In a large mixing bowl, combine the olive oil, paprika, garlic powder, dried oregano, salt, and pepper.

    Coating the fries.

    Toss the pumpkin fries in this mixture until they are well coated.

    Air frying or baking the fries.

    Place the seasoned pumpkin fries in the air fryer basket in a single layer, ensuring they are not too crowded. If necessary, cook in batches to avoid overcrowding. Or place on parchment paper lined baking sheet for oven method.

    Turning and air frying the fries.

    Air fry or bake for about 12-15 minutes or until they are tender and crispy on the outside. Shake or flip them once or twice halfway through cooking to ensure even crispiness.

    Serving fries.

    Remove them from the air fryer and let them cool slightly.

    Garnish them with optional salt, fresh parsley, or grated parmesan cheese if desired, and serve.

    Hint: Make sure the air fryer basket has only a single layer of fries, ensuring they are not too crowded. If necessary, cook in batches to avoid overcrowding.

    Variations

    • Spicy - add a pinch of cayenne pepper to the spices for a spicy kick.
    • Parmesan- sprinkle grated Parmesan cheese on pumpkin fries for extra flavor.

    • Remove from oven and garnish them with optional salt, fresh parsley, or grated parmesan cheese if desired, and serve.
