    Slow Cooker Keto Corned Beef Cabbage-

    Slow Cooker Keto Corned Beef Cabbage is the low-carb and paleo-friendly version of the traditional Irish dish.

    Slow Cooker Corned Beef Cabbage- low Carb & PaleoPin

    A low carb and paleo-friendly version of the traditional Irish dish but I made it in the slow cooker and used a healthier, preservative-free, nitrate-free, uncured brand of corned beef.

    The meat turned out not as bright pinkish-red as the traditional kind which has a chemical in it (saltpeter, a nitrate) that makes it that color.

    This uncured brand did have a tiny amount of natural beet powder to make it sort of a greyish-pink color.

    However, the taste was amazing and very much like the corned beef I remember. Even my husband said he liked it better than the traditional kind, so that is a win!

    I also skipped the potatoes in my original recipe to make it low carb legal.

    I bought my Wellshire  Uncured Corned Beef at Whole Foods Market and it came pre-seasoned with all the natural spices. You can also use my Corned Beef Spice Mix.

    Corned Beef Spice Mix is perfect for seasoning corned beef when you don't want to use the spice packet or want a healthier homemade solution.

    Slow Cooker Keto Corned Beef Cabbage:

    Ingredients:

    • 3 lb corned beef brisket with spices, Wellshire Farms brand is uncured, preservative-free, and nitrate free, (I bought this one at Whole Foods, or use my corned beef spice mix.
    • ½ large onion, chopped
    • 1 large carrot, chopped
    • 3 ribs celery stalks, chopped
    • ½ head of green cabbage, chopped in quarters
    • 4 cups water, or enough to cover brisket

    Directions:

    1. Add corned beef brisket and the spices to a slow cooker.
    2. Pour 4 cups or enough water over brisket to just cover the whole roast.
    3. Add onions, carrots and celery. Cover and slow cook on low for 6 to 8 hours or on high for 4 to 5 hours.
    4. Add cabbage the last half hour of cooking time, Cover and continue to cook the remaining 30 minutes.
    5. Remove vegetables and cabbage with a slotted spoon from crockpot to drain excess liquid.
    6. Remove corned beef and slice against the grain. Serve.

      Stacey, do you include the juice from the package in the crockpot and do you serve the carrots and onion with the cabbage or do you discard said items? TIA

        Hi Kathy, I do include the liquid from the package and you can choose to serve the carrots and onion with the cabbage or omit them if you want to slightly reduce the carb count.

      I am so glad I found your recipe just in time for St. Patrick's Day! Heading off to our local WF to see if I can find an uncured corned beef. BTW, I never realized corned beef was cured... thank you for teaching me to look for preservatives!

          The Corned Beef comes with the seasoning and some liquid in the package from the curing process.

      I have just gotten an Instant Pot and there is also slow cooker function. So hopefully that will work as I really want to make and try this recipe. We love Corned beef so much

      When you measure 6 ounces does that include all of it including the meat?

        Hi Sharon, it is 6 ounces of the meat and about 1/3 cup of the cabbage per serving. The 1/3 cup seems to have disappeared from the recipe card after updating.

        Thank you Tina, you can make this in the Instant Pot on the Slow Cook setting. Better if you saute the meat first on saute setting to brown the meat on all sides and then use slow cooker setting on normal for recommended times.
